Easy and fast for 2 people ,I make it with canned chicken breast and instant potatos then I put it under broiler till lightly browned .
I use white low fat chicken and skim milk with extra spices to
cut down on salt. If you notice no salt is listed.

Skillet Shepherd's Pie
2 cups cubed cooked chicken (see below)
1 package (16 ounces) frozen mixed vegetables, thawed and drained
1 can (10-3/4 ounces) condensed cream of mushroom soup
1/2 cup milk
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
4 cups hot mashed potatoes (see below)
In a large skillet, combine all the ingredients except the potatoes over
high heat; mix well.
Cook for 5 to 8 minutes, or until heated through, stirring frequently.
Remove from the heat and dollop with the potatoes.
Serve immediately.
MAKE IT EVEN EASIER (?) by using packaged pre-cooked sliced chicken and instant mashed potatoes.

I get my meat at Comb's Butcher shop in Elkin. A pack of chicken tenders there is between $1.65-$2.50 depending on the weight. I get the smaller size which is perfect for two, the hubby and I. You can grill chicken, saute it in soy sauce, lemon juice and different spices. Add a baked potatoe, a salad, mac-n-cheese, etc. and a roll and your good to go. I personally don't always have more than one side dish, especially if we're having bread.

You can get a pack of four tenderloins there for between $3-$4. We've found packs of ribeyes (2) on sale for as little as $5.50 or $6.


You can always make a big pot of soup, chili beans, or spaghetti and freeze what's left over so you aren't eating it all week.
