Tea is a big marinade in Asian cooking ,it adds flavor and makes meat tender .Just use strong tea,usuallly citrus flavories.

last night on the food network i saw a show that had the best fried chicken and one of the places let's the chicken marinate in Sweet Tea all night and then puts the flour mixture and fries.

i soak my chicken in buttermilk overnight. then i dip it in my flour mixture. i flavor it with garlic salt, paprika, salt and pepper, and sometimes whatever else i can think of to add. sometimes i add a tiny bit of cayenne. i always make sure to taste of it before i actually use it to make sure it's not too strong. my grandpa taught me when i was young to not cook it too fast. so i've always cooked it longer at a lower temp.
