These are not easy but they are great
Camp Chili Beans 1 pound hot sausage 2 cups chopped onion 1 cup chopped green bell pepper 8 garlic cloves, minced 1 pound ground sirloin 2 jalapeno peppers, chopped 3 tablespoons chili powder 2 tablespoons brown sugar 1 tablespoon ground ***in 3 tablespoons tomato paste 1 teaspoon dried oregano 1 teaspoon freshly ground black pepper 1/4 teaspoon salt 2 bay leaves 1 1/4 cups Merlot or other fruity red wine 2 (28-oz.) cans whole tomatoes, undrained and coarsely chopped 2 (15-oz.) cans kidney beans, drained 1/2 cup (2-oz.) shredded reduced fat sharp cheddar cheese Heat a large Dutch oven over medium-high heat. Add sausage, onion, and the next 4 ingredients (onion through jalapeno) to pan; cook 8 minutes or until sausage and beef are browned, stirring to crumble. Add chili powder and the next 7 ingredients (chili powder through bay leaves), and cook for1 minute, stirring constantly. Stir in wine, tomatoes, and kidney beans; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally. Uncover and cook for 30 minutes, stirring occasionally. Discard the bay leaves. Sprinkle each serving with cheddar cheese. Note: Like most chilis, this version tastes even better the next day

instead of going to all the trouble of tomatoes, 1 jar of medium salsa will do the trick with chili beans,

Crock Pot Chili Ingredients: 1 lb ground beef, browned and drained 1 medium onion, diced 1 small or 1/2 large green pepper diced 1 1 lb can diced tomatoes 1 1 lb can chili beans 1 small can tomato paste 1/2 cup red wine or beer 1 pkg chili seasoning mix of your choice 1 tbl chili powder Directions: Mix everything together in the crockpot and cook on low 6 or more hours. This is really good with some cheese sprinkled on top just before serving and a dab of sour cream on top.

I use
1 lb hamburger meat 2 cans light red kidney beans, drained 2 cans dark red kidney beans, drained 1 can chili beans, not drained 1 can stewed tomatoes 1 can rotel 1 can tomato sauce Basil, oregano, salt and pepper
Fry hamburger meat. Empty everything else into crockpot. Drain hamburger meat and add to crockpot. Let cook on low all day or high for 2-3 hours. It is good with fritos or crackers :)

Chili Beans
1 lb. browned ground beef 2 cans red kidney beans 1 can tomato sauce 1-2 cans diced tomatoes 4-6 Tablespoons chili powder, to taste 1 tablespoon ***in OPTIONAL one small jar of your favorite salsa as a substitute for a can or diced tomatoes
You can cook this in 1-2 hours on the stovetop or all day in a crockpot.
Serve with shredded cheese and/or sour cream

i found this one a year or so ago for my roaster oven (it's huge) you can probably cut it in half and use your crock
CHILI
1/4 cup margarine 5 lb. ground beef 2 large onions, chopped 2 cloves garlic, minced 1 can (29 oz.) stewed tomatoes 3 cans (10-3/4 oz. each) condensed cream of tomato soup, undiluted 1 can (8 oz.) tomato sauce 3 cans (16 oz. each) red kidney beans, drained 1/4 cup chili powder 1 tbsp. italian herb seasoning 1 tbsp. brown sugar
Preheat (18-quart) 18 quart Roaster Oven to 425 degrees F. Lightly spray Cookwell with spray cooking oil.
Break apart meat; place in preheated Cookwell. Add onions and garlic.
Cover; cook 15 to 20 minutes or until meat is browned, stirring once.
Stir in remaining ingredients until well mixed.
Reduce temperature to 350 degrees F.; cover; cook 1 to 1 1/2 hours or until flavors blend.
