Does anyone have any simple reciepes

E-Z Scalloped Potatoes-

Get several taters...about six or so, and slice them in rounds like for chips, make them about a 1/4-1/2 inch thick...sautee them in butter and get them nicely coated..add salt and pepper to taste...finely chop and onion and add them in as well...dont sautee for too long, you still want them firm

spray a cassarole dish with pam and place potatoes and onions in dish, pour over campbells cheddar cheese soup..i like to use two cans (you can also add bacon bits if you like)

bake at 350-400, until browned on the top...viola...scallopped taters...they are great

I tried the "One Dish Wonder" last night and it instantly became a family favorite. We had a Sunday meal on a busy weeknight thanks to this simple (and inexpensive) recipe!! Thanks J-B.

I forgot to add that in my taco soup recipe you will need to add a little water to make it less thick. How much depends on how thick or thin you want it to be.

One of my family's favorite is a " One Dish Wonder "

Prep time- 5 min.
Cook time- about 1 hour
6 boneless skinless chicken breasts (fresh or defrosted)
6 medium potatoes
1/2 to 3/4 cup Kraft Italian Dressing
1/2 to 3/4 cup parmesan cheese
about 1/2 stick butter
salt and pepper to taste
1) Pre-heat oven to 400 degrees, Line a large pan with aluminum foil, spray with Pam non stick spray
2) Cut potatoes in small wedges, place in pan salt/pepper to taste
3) Place chicken in same pan salt/pepper to taste
4) Next, pour dressing & parmesan cheese over potatoes and chicken, place butter over chicken
5) Bake for 1hour or until chicken is done and potatoes are crispy

I have made this dish many times on weekdays, it even makes for a Sunday - after church dinner. Let me know how you like it!

My family loves this and it's super easy:

Tater Tot Casserole

Brown 1 lb. lean ground beef with chopped onion and drain well. Add one can cream of mushroom soup and one can drained green beans. Add a dash of worchestershire sauce and pepper. Mix and heat, then place in a 9x13 casserole dish. Top with frozen tater tots (usually takes almost one bag) and then bake at 350 until the tater tots are done. Salt the top. Yummy, easy, and something different.

Or:

Taco Soup:

Brown 1 lb. lean ground beef in a large pot with chopped onions. Add one envelope taco seasoning. Then add the following (do not drain any of these):
1 can corn
1 can kidney beans
1 can garbanzo beans (chick peas)
1 small can chopped green chilis
1 can diced tomatoes
1 can diced tomatoes with jalepeno peppers (spicy)

You can add some hot salsa or hot taco sauce if you like your food spicy.

Let this simmer for awhile until hot. When you put it in a bowl, add a spoonful of sour cream and a little shredded cheese and top it all with a bit of salsa. Eat it with corn chips. SOOO good! Can't go wrong with this.

Chicken, shrimp, or salmon ( I used to hate salmon lol) boil it in water and add 1 salzon seasoning. Boil 1-2 bags of "boil in bag" white rice. Heat up black beans or blackeyed peas.
Meat on the side, beans/peas on the rice.....Done in about 10 mins. Leftovers are good when heated.

great picnic idea....grape salad that is fablous!
8oz sour cream
8oz cream cheese
8 cups of grapes
1/2 cup sugar

topping
3/4 cup brown sugar
1 cup chopped walnuts
Quarter the grapes add sour cream and sugar and ccheese mix together well--put in serving dish. mix brown sugar and nuts and spread on top......

It just tastes like summer!

If you have a slow cooker and take some extra time in the morning, you will have a good meal waiting for you. You can even prepare it the night before, refrigerate and put it on in the morning. Beans, meat and potatoes, soups, and chilies makes for a different menu.

Try doing crock pot meals, roast and potatoes, chili, Bar-B-Q chikin' etc. Throw it together in the morning, just serve and do dishes in the evening...Saves time for us...Evenings are crazy.

Does anyone have any simple reciepes they would like to share or ideas of something quick to fix on the weekdays that is different? I am getting so tired of the same old stuff all the time, I am not that big of a cook, I rarely have the time to cook something big for dinner because of getting home late in the evenings. Its just my husband, my mother and myself and we are all getting tired of the same types of food day after day, you know spegetti, tacos, hamburgers, hotdogs, etc.......Any ideas would be appriciated.
