Strawberry Rhubarb Cream Pie
1 1/2 cups white sugar
1/4 cup all-purpose flour
3/4 teaspoon ground nutmeg
3 eggs, beaten
4 cups chopped rhubarb
3 cups halved fresh strawberries
1 recipe pastry for a 9 inch double crust pie
1 egg white
Preheat oven to 400 degrees F .
In a large bowl, mix together sugar, flour, and nutmeg. Stir in eggs. Fold in rhubarb making sure to coat well, then do the same with the strawberries. Pour mixture into pie crust. Place second crust on top being sure to cut slits into it to vent steam. Brush egg white on top crust.
Bake for 50 to 60 minutes in the preheated oven, until rhubarb is tender, and crust is golden.

I dug my copy of the Farm Bureau magazine out of the trash for you because I remembered there was a recipe in it for rhubarb pie. Here it is.

Strawberry Rhubarb Pie

ingredients
Mix together:
1 1/2 cups fresh strawberries
4 cups sliced rhubarb
1 1/2 cups sugar
1/2 cup flour
1 egg well beaten

2 9 inch pie crusts

Instructions:

Place pie crust in a 9 inch glass pie plate (metal pie tins react with the fruit). Sprinkle lightly with sugar. (this keeps the bottom crust for getting soggy). Add strawberry/rhubarb mixture. Cover with vented top pie crust. Flute the edges to seal and cut off the excess pie crust. Bake at 425 degrees for 20 minutes. Reduce heat to 350 degress and continue baking for 30 minutes. Pie crust should be light golden brown. Serve with warm vanilla ice cream if desired. 8 servings.
