This recipe has been in my family for ages. We have eaten these eggs for as long as I can remember. I hope it is what you are looking for.

Ingredients
4 C vinegar
1/2 C sugar
2 T pickling spice
2 tsp. salt
2 bay leaves
2 to 3 dozen boiled eggs, peeled
beets and/or juice (optional)

Directions
Combine vinegar, sugar, pickling spices, salt, and bay leaves. Heat to boiling. Pour mixture over eggs. Add beets and juice or food coloring to color, if desired. Store in large glass jar in refrigerator.

They are pickled in beet juice and vinegar, I think.

Are they just regular pickled eggs or is there something special about them? I've never been there.
