Using goAPPSTATE09's Caramel Apple Dip, with the addition of some cinnamon and/or cloves would be good with oven baked sweet potato fries.
For beets? Unless you want to make an onion dip with a little ground horse radish for beets, and I am assuming they are pickled beets, I cao't imagine serving them as a finger food. If you must serve them then prepare to provide wet ones. Beet juice will stain every thing it touches. BTW, don't try to serve raw beets. You will, seriously, poison your guests. Beets must be properly cooked or they are poisonous.

Buffalo Chicken Dip is good. If you don't have the recipe and want it let me know and I will look it up. I think it uses two cans drained chicken (shredded up) one large cream cheese 4-6 oz Texas Pete and 1/2 cup ranch dressing and 1/3 cup mozzerella cheese. Put in baking dish and top with more cheese. Bake 20 mins 350. Don't hold me to that though and if you need a more accurate recipe let me know and I will look it up and post it.

Hamburger Cheese Dip
2 lbs. hamburger, browned and drained
2 lb. box Velveeta Cheese, cubed
1 tablespoon (or more) Chili powder
1 tablespoon Worchestershire Sauce
2 cans chunky salsa ( I use one medium, one hot)
(If you like it hotter, put in two hot.)
Brown hamburger and drain well. Put in crockpot. Pour in cubed cheese, cover, and stir frequently
until melted on high. This takes 30-45 minutes.
Turn to low and add other ingredients, stirring until
well blended. Serve with tortilla chips.
You can also do the above in a 4-6 quart pot on the stove.
After you brown and drain hamburger, turn the burner to low so
the cheese will not burn. You will have to continuously stir the
cheese until it melts so it will not burn on the bottom. This will only
take a few minutes. Add the other ingredients and stir until well blended.
Transfer to a crockpot to keep warm for a party. I also halve the recipe
when I make it just for my family. Serve with tortilla chips.
