Cornbread Salad 1 box Jiffy Cornbread mix, baked and crumbled 6 oz cooked bacon, crumbled 2 medium tomatoes, finely diced 2 medium onions, finely diced 1 medium green pepper, finely diced 1 can of corn, drained Ranch dressing (I usually just mix a little in and see if it is wet enough to stick together) Mix all ingredients together. Refrigerate

A Cornbread salad would be good....
Use a pan of cornbread, can of drained diced tomatoes, can of corn, can of drained kidney beans, chunks of ham, chunks of cheese and ranch dressing. Mix all together using enough dressing to make it moist. :)

I have been making a cucumber salad and I think I will make one for Thanksgiving: cucumbers, tomatoes, red onion, garlic, fresh parsley & dill, salt, pepper, sugar, white vinegar, balsamic vinegar, good olive oil..I think the first time I also put fresh sweet basil and it turned out good.

Pecan Rice Dressing 1/2 cup chopped pecans 6 cups steamed white rice 6 chicken livers 1 lb. ground pork 1 lb. ground beef 1/4 lb. butter 1 cup diced onion 1 cup diced celery 1 cup green bell pepper 1/4 cup red bell pepper 2 TBS minced garlic 1/2 cup sliced green onions 1/2 cup chopped parsley Salt and cracked black pepper to taste. Poach chicken livers in a lightly salted water. Allow to cool, chop and reserve poaching liquid. In a large, heavy-bottomed saute pan melt butter over medium-high heat. Saute beef and pork 30 minutes. Stir in chopped chicken livers, onion, celery, bell pepper and garlic. 'Continue to saute 30 more minutes. Season with salt and pepper. Stir in rice. Garnish with green onions, parsley and pecans.

Law! Don't forget turnips, greens, particularly creecy greens or collards. Lots of folks like creamed onions. I particularly like potato salad (mustard, southern style), creamy cole slaw, marinated carrots or mixed vegetables. Candied sweet potatoes with pecan pieces cooked in them are especially good. Please don't forget the home made cranberry sauce with coconut and pecans. Yum!

I have had these in the past, fruit salad, sweet potato casserole, succotash (baby lima beans with corn), baked corn casserole, broccoli casserole and stewed apples. I have also had a mini salad bar with different greens mixed together with additional toppings to be added like, tomatoes, green peppers, onions, chickpeas, cheeses, salad dressings, etc.

1 box Jiffy brand cornbread mix
1 can (14-1/2 ounces) creamed corn
1 can (15 ounces) whole corn kernels, drained
2 large eggs
1 cup sour cream
1/4 cup butter or margarine, melted
1/4 to 1/2 cup shredded Cheddar cheese
1. Preheat the oven to 350 degrees. In a large mixing bowl, mix together the cornbread mix, creamed corn, corn kernels, eggs, sour cream, and butter. Transfer to a 13-x-9-inch greased baking dish.
2. Bake for 30 minutes or until the center is firm. Remove from the oven (you can let cool, if you want to serve it later). Sprinkle the cheese on top. Return to the oven and bake for 15 more minutes.
*** I do not use the Jiffy mix - I just mix up self-rising yellow corn meal & small amount of of flour ( same amount I would use for pan of cornbread)

I sometimes make a green bean casserole for holiday dinners. Last year I made a cornbread/corn casserole that everyone enjoyed. We have had a macaroni salad in past years that went over pretty well.

Does anyone fix anything different , say salad or veggie wise for thier Thanksgiving meal? Of course we will have the traditional turkey and dressing but i am looking for different ideas for side dishes, Want to get out of the mashed potatoes/green beans/ and corn rut.
