Define "DIABETIC" recipe......is he counting his CARB intake?

I would check out www.fbnr.com to see if there are any helpful hints/recipes there....but can send you some specifics if we know more what he can/CANNOT have.

Diabetic Apple Dumplings
I used to make this for my mom all the time. It's easy.

1 can of butter-me-not biscuits
2 cups (approx) chopped apples
cinnamon
1 can of diet Mtn. Dew (or diet 7-up, if using sugar-free brown sugar)
Butter
Sugar-free brown sugar (optional)

Press each biscuit out and place a few chopped apples in each one. You can do these one at a time. Add a touch of cinnamon to each one. Fold the sides together until you have covered the apples inside the dough. Place in a baking dish. Sprinkle the remaining apples over the biscuits. Pour the Mtn. Dew over the apples & biscuits. Put a dab of butter on each biscuit. Bake at 350 degrees until browned.

If you want these a bit sweeter, you can add a bit of sugar-free brown sugar to the apples, but I suggest using diet 7-up instead of Mtn. Dew if you do this.

This can also be made with regular soda for a non-diabetic dish.

Matt's Mama, I was just recently told I am borderline diabetic. I thought it would kill me to cut out the sugar in my tea, but now I use Splenda for anything that needs sugar....and I can't tell the difference.

The nutritionist at the hospital can also give you some good hints and recipes.

Peach Cobbler

2 cans of lite cling peaches(drain and keep liquid)
1 box of yellow cake mix
cinnamon
splenda

drain peaches and place in a cassarole dish. take liquid from peaches and add to dry cake mix..mix well (will be thick)pour over peaches and top with cinnamon and slpenda--bake 350* until golden brown...
This is so good you won't know its low in sugar..

There is a really good older book, something like Cooking for a Diabetic. It is older, but really good recipes in it. God Bless you and your husband.
