Okay so those sugar cookies I was talking about turned out awful.. my own mistake LOL. I forgot to add the baking powder and salt (very essential!!). So I am having to ditch making the sugar cookies since I am headed to VA in a few hours to see family. I am opting instead on making the pin wheels and

PEANUT BUTTER PIE
1/2 cup peanut butter
12 oz cool whip
3 oz cream cheese, room temp
1 c sugar

mix cream cheese and sugar til smooth. Add peanut butter and beat. Mix in cool whip. Pour mixture into graham cracker crust and refridgerate for an hour. enjoy :)

Chocolate Pecan Pie
2 (9 inch) unbaked pie crust
4 eggs, beaten
3/4 cup white sugar
1/4 cup packed brown sugar
1 tablespoon all-purpose flour
1/2 cup butter, softened
1 cup light corn syrup
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1 cup chopped pecans

Preheat oven to 350º F.
In a large bowl, blend together the eggs, white sugar, brown sugar, flour, butter, corn syrup and vanilla.
Add the chocolate chips and pecans; mix well and pour into pie crusts.
Bake at 350 ºF for 40 to 45 minutes

CHOCOLATE ECLAIRE CAKE

8 oz cool whip
3-3oz pkg of instant vanilla pudding
3 cups milk
1 can chocolate frosting
box of graham crackers

in a large bowl mix the pudding and milk according to package directions
fold in cool whip

in a pan line the bottom with whole graham crackers, add pudding mixture to top, repeat with crackers and pudding ending up with crackers on top

heat frosting in microwave for 45 seconds add this to the top of the last layer of crackers.
cover and place in fridge, best served the next day after preparation

best fixed the day before serving.

i am making chocolate eclaire cake, couldnt get much easier than cool whip, graham crackers, vanilla pudding and chocolate frosting.

Thank you grimey, I think.. haha. I used to make those mud pies all the time :D Just find some mud and shape into small cakes on a hard surface... wait until the sun dries everything up.. go outside and collect your dirt pies :D

What are you guys making? I'm going to include some of my favorites! They are absolutely easy, and you can be sure of that because I make them haha. I don't "do" difficult stuff.

PEANUT-BUTTER PINWHEELS (makes two large rolls)
1 pound confectioners sugar
jar of peanut butter, JIF is great
1 can fluffy, whipped white cake icing

In a medium bowl, alternate between pouring sugar and dipping out icing and stirring them together, it's easier than doing it all at once. Use the whole can of icing.. you know you have it mixed up to the right consistency when the mix is super stiff and not sticky to the touch at all. You wont be stirring so much as "mashing." Lay out wax paper or just flour a clean surface. Take half of the mix and roll out into a neat rectangle with even thickness all over. Spread peanut butter over the whole thing, using however much peanut butter suits your taste. Peel up one side of the roll and start rolling towards the other side. Repeat with the rest of the mix. Refridgerate the two rolls, and slice when cold enough.

CHESS BARS (I never have any left)
crust: 1 Box yellow cake mix
1 stick butter, melted
1 egg
topping: 4 c powdered sugar
3 eggs
8 oz block cream cheese, room temp

Mix the crust by hand, pat into buttered cake pan. Set aside.
Mix the topping with a hand mixer until creamy. Pour over crust.
Bake at 325F for 40-45 min. It wont be like a cake, so the toothpick test wont work. Just dont peek in on it too much, let the oven do its job haha. The topping will crack and fall in the middle and its supposed to do that. Yum.


SUGAR COOKIES- I havent tried this yet but am going to tomorrow night.
