He knows the mechanics of processing. Has anyone got any of the seasoning recipes they have used themselves or recipes for curing rubs?

My husband got a deer and took it to the usual place to have it processed. The place had been sold since last year and they charged him almost double while giving him half the meat he usually gets. He's furious and has decided to process the deer himself. We need sausage recipes, different types and any words of wisdom anyone might have for our processing deer into burger, breakfast and other types of sausage, etc. Thanks.
