DEER OR BEEF JERKY

2 to 3 lbs. lean meat sliced thin
1 c. soy sauce
1 c. Worcestershire sauce
2 tsp. seasoned pepper
1 tsp. garlic powder (heap)
1 tsp. onion powder
2 tsp. Hickory Smoke Salt (heap for deer, level for beef)
1 tsp. crushed red pepper
1 tsp. liquid smoke

Tenderize meat with meat cleaver, and place in marinator. Mix rest of ingredients well and pour over meat. marinate 36 to 48 hours, stir or turn every few hours. Place on racks of foil lined broiler pans and bake in slow oven 200 to 225 degrees 15 to 20 minutes to a side or until dry.
More liquid may be added if needed to cover meat, but do not double spices. if you want to double recipe set in separate containers.

Deer Jerky

4-6 lb of venison
4 tbs. salt
4 tbs. course black pepper
21/2 tbs. paprika
1/2 tbs. msg (optional)
1 tbs. (Morton's) natures seasonings
1/2 tbs. garlic powder
3 tbs. season salt (Lawrys)
1 cup Worcestershire Sauce
4 cup red wine vinegar
cayenne pepper to taste

Mix ingredients and let meat soak for 4 hours or more I prefer to smoke mine until dry but can be dehydrated in oven or dehydrator Seal in plastic bags if there's any left enjoy!

JERKY

1 1/2 lbs. meat
1 tsp. seasoning salt
1 tsp. liquid smoke
1 tsp. B.B.Q. salt
1 tsp. accent
1 tsp. onion powder
1/3 tsp. garlic powder
1/3 tsp. black powder
1/4 c. soy sauce
1/4 c. Worcestershire sauce

Cut long thin strips of lean meat -- deer, beef -- then soak in combined ingredients for 24 hours. Remove from liquid and place on oven racks for 10 to 12 hours, 150 degrees, do not try to rush the drying process. Very good Jerky!

This is for 2 lbs of meat

2/3 cup Worcestershire sauce
2/3 cup soy sauce
2 teaspoons ground black pepper
2 teaspoons onion powder
1 teaspoon liquid smoke
1 teaspoon red pepper flakes
1 tablespoon honey

I use Hi Mountain Jerky Cure marinated for about 36 hours and complete the jerky on the gas grill at 200 degrees for about 1 1/2 hrs. Awesome.

Black pepper and tobasco sause mixed in a bowl then spred thick on strips before dehydration.. to me it's awsome!
