Deer BBQ and Deer Sausage

Deer Chili n Beans
8-10 slices bacon
2 lbs. lean deer meat, ground
1 lb. ground sirloin
1 lb.Hot pork sausage
4 large onions, chopped
2 bell peppers, chopped
5-6 chopped jalapeños
1 heaping tbl. chopped garlic
1 cup Worcestershire sauce
3 tsps. lemon pepper
3 tsps. celery seed
3 tsps. dry mustard
6 tbls. chili powder
4 cans diced tomatoes
4 cans Light Red Kidney beans
3 cans Dark Red Kidney beans
Creole seasoning, to taste
3 cups red wine
Fry bacon until crisp in a large pot. Remove bacon, crumble and set aside. Then brown ground meats and sausage in the bacon grease.
Remove all meats; set aside.
Add onions, bell peppers, jalapeños and garlic, cook until onions are clear.
Add all other ingredients, (except red wine) including meats and crumbled bacon. Season to taste. Cook on low heat for 30 minutes, then stir in the wine and continue cooking for about 3 more hours, stirring often.
Skim fat from top of chili and continue cooking until it reaches the texture and consistency you want.

Deer Stew
1 1/2 pounds of deer meat cut in bits size pieces
1 bag of mix vegetable
2-4 potatoes peeled and cubed
1 small onions chopped
1 can cream of mushroom soup, or golden mushroom soup
Beef broth or cubes
Garlic powder
Onion powder
Salt and pepper
Seasoning salt
1-2 bay leaf,
Flour
Egg noodle if like add at end of cooking.
Mix flour, seasoning except bay leaf. to taste, in freezer bag
or paper bag, mix well, coat meat and brown in frying pan,
Meanwhile put everything's else in cooking pot, except noodle,
with about 1-2 quart of water-you should know how much water to
use, cook on medium.
When meat is done add to soup, cook till
done-check water level add water if need be
Deer Lunch Meat
2 pounds ground deer or other game meat
1 cup water
1-1/2 T meat tenderizer
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons liquid smoke
1-1/2 teaspoons pepper
Mix all ingredients together well and chill in refrigerator for 24
hours. Shape into 2 loaves and wrap in foil, with foil dull-side-out.
Poke holes in bottom of foil so that juices can escape.
Place in loafpans and bake 1-1/2 hours at 325 F .
Chill and slice for lunch meat.

anyone have any recipes? i had both several years ago that were delicious!! now if my husband will just go slay a deer, I want to fix some! this will be my first time fixing deer, IF he brings one home lol thank you!!
