Try brining your turkey in apple juice.

Thaw the turkey 3 or 4 days before Thanksgiving in the refrigerator or if you forgot to, then thaw it in cold water 30 minutes per pound still in the wrapper breast side down changing the water often to keep it cold. I've never fixed anything besides a cheese sandwich but I watch the Food Network.

Also don't put too much oil in the deep frier leave room for the well thawed turkey cause when the oil splashes over the side there will be FIRE!

slade02's suggestion of the infrared turkey cooker (propane) that does not need any oil cooks the best tasting turkey and needs ony 10 mins per pound and cooks up to about a 13 lb turkey Home Depot and Lowes has them for $100. I am gonna cook mine in the oven.

Seriously. Whatever you do, don't put a frozen turkey in a deep fryer with hot grease. It will explode. Make sure its thawed out first.

So, do this. Fill up the cooker with water, measured, like in gallon milk jugs, drop the turkey in and see that it doesn't come to the top, but just covers the bird. And when you do the real thing, drop that bird slowly, and gently.
Ever how much water it took, that's how much oil to use.
Me,, I'm eating out, having seafood. Heard mama Zoe's will be open, and haven't tried it yet.

set the fryer as close to your house as possible, fill it with oil to within 1 inch from the top of the fryer heat the oil as close as you can to 450 degrees, then drop the frozen bird in quickly... then run inside and check your home owners insurance policy and call the fire dept

Be sure your oil is hot enough, but not too hot, and keep the cooker away from the house, trees, etc. You can google your question and find several videos. If you want a to-die-for turkey, use an infra-red cooker. I've had deep fried and thought that was good, until I had one cooked in an infra-red. My, my, my... absolutely delicious!!
