I don't have a recipe for cupcakes but there was a recipe for a cream filled, red velvet bundt cake in the current issue of Taste of the South.

homemade cream cheese icing is better
Double this recipe if your making a cake with it:
1 (8oz) cream cheese, softened 1lb powdered sugar 1 tsp of vanilla 1 tbl of cream or milk
cream the cream cheese until smooth add vanilla and gradually add powdered sugar and milk and mix until smooth.
Take a boxed red velvet cake add 1 cup of sourcream to the rest of the directions or use a scratch recipe bake cupcakes as directed. Let cool completely. take an icing bag with tip fill with icing insert tip into top of cupcake and fill until top starts to raise. Or get a squeeze bottle with a tip i think they have those at walmart

I have never made a pumpkin rool before but i saw a red velvet cake the other day that was make like a pumpkin roll with the cream cheese as the center of the roll. So that may be something you would want to try. It would take up less room.

If you wanted it to be easier, just get a red velvet cake mix and make that and use the cream cheese icing in a can although you might have to whip it with a mixer to get it to go through an icing bag.

Here's how you stuff a cupcake with icing. Go to the bottom of the page and there is a red velvet cupcake and icing recipe. You'll just need to follow the stuffing part of the first recipe with the second recipe.

my friend told me she had eatin some red velvet cupcakes with the cream cheese incing inside of the cupcake, how do I do this I want to fix them for my daughter she loves red velvet cake? Please and Thank You
