Cuban Picadillo - Beef Hash of Cuba
1 lb ground meat
1 large onion, chopped
2-3 garlic cloves, chopped
1 small can tomato sauce
1/4 cup dry white wine
Pimiento stuffed olives
Raisins
Salt and pepper to taste


In a large skillet, brown the ground meat, onions and garlic. If meat is not too lean, pour out whatever fat you render.
turn heat down to medium low. Add the tomato sauce and wine. While it simmers, chop up the pimiento stuffed olives and add to meat mixture, it is ok to add a little bit of the brine, if you wish. Add the raisins and adjust the seasonings.
If you like it soupier, just add more tomato sauce and/or wine, if you wish.


Serve over fluffy, white rice.
If you like your picadillo almost dry, not too soupy.


For the pastelitos, (little pies) let the sauce simmer almost to dry, so you will not have a runny mess on your hands.

THanks for sharing. My mom made Ropa Vieja for me when I was a little girl. I think its a good meal and its special. Meals are made to be shared with those we love and treasure.

My favorite Cuban meal.I leave out the anise and add peppers instead in the fritters.

Cuban Ropa Vieja
2 1/2 lbs flank steak, cut in strips
5 tablespoons oil
2 1/2 teaspoons minced garlic or 5 cloves garlic, minced
1 large onion, diced
1 green pepper, diced
2 chopped Jalapenos(optional)

1/4 teaspoon black pepper
1 (8 ounce) can tomato sauce
1 cup water
6 ounces sofrito,,,, sofrito consists of garlic, onion, and tomatoes cooked in olive oil,

Heat 3 tbsp. oil in skillet on medium, brown meat on all sides. Remove from skillet, add remaining oil to skillet, stir in garlic, onion and green pepper and cook until translucent. Stir in black pepper, browned meat, tomato sauce, water and sofrito. Simmer until meat is tender and shreds easily, about 1 hour. Serve on top of rice.

Corn Fritters
1 cup fresh corn kernels, ground to a pulp
1 egg, well beaten
1/2 tsp anis seed, ground or pounded w/mortar and pestle( I use Jalapenos instead)

5 Tbsp sugar
1/2 tsp salt
Oil for frying
Mix all the ingredients. If too liquid, add just a small amount of all-purpose flour and mix well.

Drop in hot (375º) frying oil a spoonful at a time. Should yield enough for 4 people.
Note: If you add a little bit of vinegar, about 1/2 teaspoon, to the batter,

the fritters will not absorb as much oil.

We have been enjoying Cuban recipes this week, beans,rice , carne con papa, bistec con salsa....Its really great taking a year to learn Cuban cuisine.

"So to start a journey into the art of Cuban cuisine I must start on the basic dishes. Rice and Beans are the essential dishes for a basic meal. I had traveled on an airplane on New Years Eve to Miami and enjoyed the best cuisine in Miami . I also enjoyed a wonderful trip back from Miami recently on a train to Raleigh, North Carolina. It was a great experience to travel and enjoy this cuisine in its hub of Miami. I also discovered a nice restaurant right here in the heart of the Blue Ridge Mountains that serves Cuban cuisine. However, being born in Hialeah,Florida and coming from Cuban ancestors I feel I need to master the cuisine. My seven year old daughter explained the concept of good beans to me today. If it smells good then it will taste good she remarked as I served her a plate of frijoles negros ( black beans). Lets just say she ate them all up. Its a good sign when a seven year old will ask for more beans.
So how can you serve your own plate of frijoles negros ( black beans).

I'm still making Carne con Papa. My recipe is the most "popular " in Canada's Orato. Still making this Cuban dish.

I made 2 plates of black beans today. Even a toddler will love it. Mix with rice and enjoy.
