Easy Vegetarian Crockpot Spaghetti (Meat version alternative added at end.) 12 servings (If too much, simply cut all ingredients in half.) http://img.recipezaar.com/t..."> 5¼ hours 10 min prep
2 envelopes spaghetti sauce mix
2 cans tomato sauce (8 oz)
2 cups water
2 small eggplants
2 small bell peppers, cut into 1 inch chunks
6 medium tomatoes, cut into small wedges
1 teaspoons salt
16 ounces uncooked spaghetti
8 ounces grated mozzarella cheese
In slow cooker pot, mix dry sauce mix with tomato sauce and water. Cut zucchini into 1/2" crosswise slices. Peel eggplant, slice thinly, the cut each slice into quarters. Add all the diced and sliced veggies to the crockpot. Cover and cook on low 4-6 hours or until vegetables are tender. Meanwhile, cook spaghetti according to package directions. Drain. Serve sauce on top of cooked spaghetti with mozzarella sprinkled on top.
If you want a meat sauce, brown and drain 1 or 2 lbs ground beef (I use 93% lean/7% fat) and add to mixture about 2-3 hours after starting, otherwise the spaghetti will be greasy.

Instead of tomato sauce - try Bold Manwich Sauce. No tomato or V8 juice. It is different and it is excellent. I cook my spaghetti noodles prior to placing in crock pot. This is not a juicy meal-it's "drier " than what spaghetti.

I was wondering if anyone had a recipe of crockpot spaghetti they were willing to share. I think you put uncooked spaghetti in it and also juice. (V-8, or tomato juice possibly). It also included hamburger meat and some spices.
