My husband and I love is cheese dip. It is simple, but so good. You can probably replace the pound of sausage with a pound of ground beef.

1 lb sausage (I use Neese's)
1 1b velvetta cheese
1 can original rotel

Fry the sausage, drain. Cut the velvetta into cubes (this makes the cheese melt faster) Put all three ingredients in a small crockpot. Set crockpot to high. Check after about 20 mins, stir. Cook around 20 minutes longer or until cheese is melted.

Hi, this recipe comes out of the "Pillbury Easy Meals Cookbook"

Spicy Cheeseburger Nachos

1 lb. lean (least than 80%) ground beef
1 clove garlic, minced
2 boxes (16 oz. each) Mexican prepared cheese product with jalapeno peppers, Cut into cubes.( i use plain Velveeta Cheese)
2 cans (10 oz. each) diced tomatoes with green chiles, drained
1/2 cup chopped green onions (about 8 medium sized)
chips for diping

1.) In skillet, Cook ground beef and garlic, stirring frequently, until beef is thoroughly cooked, drain. Spoon into 3 1/2 to 4-quart slow cooker. Add cheese and tomatoes. Mix well.
2.) Cover, cook on low heat setting 3 to 4 hours, stirring after 2 hours.
3.) Before serving, stir in onions. Serve with chips.
