oil in cast iron pan heat then your favorite corn meal add about 2 table spoon mayonise and mix enough water to make it kinda soupy then puy in hot pan an bake. the mayo has eggs and oils and milk in it very easy and very good corn bread

I don't really measure the milk either so you may want to start with a cup and work your way up.

Sorry freddiemae that's cooking oil... I use canola and don't really measure it, but 1/4 cup should be about right.

Place cold seasoned 10" skillet in cold oven. Set oven for 450 degrees. Wait about 10 minutes and start mixing batter.
3 cups White Lily or Laura Lynn cornmeal mix. 1 heaping tablespoon flour 1/4 cup 1 1/2 cups milk or more if needed mix well When oven preheat clicks off remove skillet with oven mitt and spray lightly with cooking spray. It's gonna smoke a little. Pour batter into skillet , place in oven and set temp up to 500 degrees. Bake for 30 minutes.
This recipe makes a crusty cake which is how I like mine. It also uses less oil than most and never sticks. I don't know what freddiemae is making but it don't sound like cornbread. But I may give it a try.

You're right Freddie. Most of us country folk would throw any cornbread out to the dogs if we could taste (or knew) sugar in it! That's why I can't understand why some many folks use the Jiffy Crnbread Mix? It tastes so sweet it should come with a tub of frosting so you could serve it as cake!

I have had some people tell me that you should not put sugar in cornbread. In my recipe there is not enough sugar that you would even know it was in there but it balances out the other flavors.

This is approximately because I don't measure
2 cups cornmeal 1 cup flour 1 egg 2 TBLSP sugar 1 cup buttermilk. (or more if batter is too thick)

preheat oven to 400 degrees with a small bit of cooking oil in pan. Take one cup of meal. 1/4 cup oil, 3/4 cup buttermilk and mix. wait till stove "kicks" off and put mix in hot skillet. time for 10 minutes and enjoy. my moms old recipe and it works good.
