Cornbread Salad using Jiffy Cornbrea mix

1 8oz box Jiffy Cornbread Mix
1 med green pepper chopped
1 med onion chopped
1 16oz can Pinto Beans(drained)
1 cup sweet pickle relish(drained but reserve juice)
1 3.5oz jar real bacon bits or substitute imitation bits
1 or 2 med tomatoes chopped

cook Jiffy Mix as to the directions on the box, cool
crumble the cornbread into dish to be served on
reserving about 1/3 cup to use as topping
layer the ingredients as listed above

topping
1 cup mayonnaise(can be lite mayo)
1/2 cup of reserved relish juice
1 tbls sugar or splenda
mix well and pour over cornbread mixture.
sprinkle the reserved cornbread crumbs on top
Let sit in refrigerator for 1 to 2 hours or even overnight if necessary

This is really good! You can add other veggies such as: drained whole kernel corn, cucs, or whatever sounds good!
