Copper Pennies (Marinated carrots, etc.)

Someone asked for this recipe on Community Voice.

INGREDIENTS:

5 Cups cooked, sliced carrots. about 1/4 " thick,

1/2 Cup chopped or coursely diced onions - not red onions, they are too strong for this,

1 Cup green peppers or mix red, yellow, and green for color,

1 Can Campbells Tomato Soup, undiluted,

1/2 Cup apple cider vinegar,

1/2 Cup canola or other good vegetable oil,

1 Cup sugar or 1/2 Cup sugar and 1/2 Cup Splenda,

2 Tbs Worchestershire sauce,

1 to 2 tsp prepared mustard,

1 tsp salt (I use sea salt.)

DIRECTIONS

Cook carrots done but not very soft,

Mix all other ingredients in saucepan and bring to a boil,

Cook 1 minute,

Pour over carrots and stir well.

Let cool before serving.

Makes 4 nice servings.

(The marinade makes an excellent french style dressing if you want to use it for this purpose.)
