it may be to late but we just cooked one last weekend it turned out great if you still need info let us know we had about 75 people at our party our pig weight 195 before we cooked it and had plent left over

I just saw what Mnt Dew said. That would be power cooking, and I think 350 is too hot, but it would work. I only know how to do it low and slow.

Id actually try to get the temperature up over 200
I would also do it for 12 hours minimum.
Hope you got apple wood. Its best for pork.

Put it in a smoker and cook it for about 14 hours.
If your husband is on the fire dept staff, you all should have people who can help you cook the pig.

compuser-thanks for the advice! we will probably stock up on extra Boston Butts just in case. if i'm not mistaken, i'm thinking some of the best pork bbq comes from the shoulder. yummmm we can always send the extra stuff off for livermush lol

Cost wise you are much, much better off to use the Boston Butts than the whole hog. So much waste with the whole hog, such as head, feet, side meat. I don't doubt that your cost by going with the bb is about 1/2 and much better.

Does anyone know how to cook a whole pig or know anyone who does? This will probably get moved to the recipe forum but I really want this to be seen! I am a Wilkes native, now living in Alexander county. My husband is chief of a local fire deparment and I am also a firefighter (in training) haha ANYWAY...every year we have a July 4th celebration the week before the 4th for the community and we serve breakfast, lunch, and homemade ice cream. (and a parade, and inflatables for the kids, etc.) this year we are wanting to have good pork BBQ on our menu along with the usual grilled humburgers and hotdogs. it's never too early to get a start on the event! :)
