It is simply collard greens cooked and placed in the middle of a square of cornbread with a piece of fried fatback on top of the greens. And to top it off have a glass of cold old fashioned buttermilk. I have been eating those sandwiches from those ladies at the Autum Leaves Festival for several years.

In third world countries they make the greens (cooked) into little pies ..(sandwiches) and sell them in stands in all of the citys.

i dont know what a collard green sandwich is, but i have for many years even as a child eaten "cabbage" sandwiches. just take some good fresh raw cabbage, slap it between to pieces of bread with mayo and yummmm yummmm!!!!

At the fall festival in Mt. Airy this weekend...they were selling something that was called a " collard green sandwich". What, pray tell, is that and how do you make it?
