Coconut Sorbet
Yield: 1 servings
20 oz Coconut milk4 oz Finely shredded coconut 1/2 c Sugar
Combine the ingredients in a heavy saucepan and place over medium heat. Bring to a simmer and cook until coconut is soft and tender, about 30 minutes. Cool the mixture to room temperature, cover and chill in the refrigerator until cold. Place the mixture in an ice cream or sorbet maker and freeze as directed. (You can freeze the mixture in a bowl or container directly in the freezer. When completely frozen, scrape the mixture to form servings...the flavor will be the same, but the consistency will be different!) Makes about 3 cups of sorbet.

Where is the Kroger? Anywhere near? My mother loves coconut ice cream. You can get a coconut cream milk shake at Sonic. Half price after 8 PM. Yummy!

Coconut Ice Cream
Ingredients
1 cup milk
1 (14 ounce) can cream of coconut
1 1/2 cups heavy cream
1 1/2 cups sweetened flaked coconut (optional)
Directions
Combine the milk and cream of coconut in the container of a food processor or blender, and mix thoroughly. Stir in cream and flaked coconut.
Pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions.

Here's an old recipe from Cooks and modified that may do you right.
Pineapple-Coconut Sorbet
Ingredients
1-1/2C pineapple juice. Chilled 1 #203 can pineapple in own juice. Chilled 1 cup sweetened cream of coconut. Shake well before using. Chilled 1 tsp real vanilla 2 tbsp lime or lemon juice 2 tsp lime or lemon zest 1/4 C sweetened, southern styled coconut. Chilled 3 Tbsp good rum or vodka. Chilled (adding the rum or vodka will keep the sorbet from becoming too icy but you can substitute rum flavoring if you don't want to use the alcohol.)
Taste for sweetness. If not sweet enough then add a small can sweetened condensed milk.)
Directions
In Cusinart blend pineapple juice, pineapple, lime or lemon juice, lime or lemon zest and blend until pureed. (You can use a blender if you don't have a Cusinart) Add shredded coconut and rum or vodka and blend for a few seconds unless you want fine coconut pieces (my preference.) Add mixture to ice-cream maker and mix as suggested by brand maker.
Freeze in an airtight container for 4 to 5 hours to ripen.

We're not far enough south for a Publix and we're not north enough for Kroger... So we're stuck in a place where coconut sorbet is too exotic to be stocked.
Oldest daughter did just confirm that about a month ago, she got pineapple coconut Haagen Dazs ice cream at Walmart.

I had never shopped at Kroger's until I moved up here, and it's the best! I will never go to Food Lion or Lowe's Foods again :)

Brushy mtn. smokehouse has coconut ice cream but it is like $3 for a small cup. I wish I could find coconut ice cream though it is my favorite. The apple orchard that closed going up to taylorsville use to have it.

you might try over at brushy mountain creamery, i dont know how much you need and it might be a little expensive but i remember my friend telling me they have coconut ice cream.

Haagen-Dazs makes it, although I don't know if any of the grocery stores around here carry it. Walmart has strawberry and raspberry, and it does seem like my oldest daughter just got coconut recently, or pineapple, maybe. The new Lowe's Foods seems to have a bigger selection of stuff than normal, so you could try there.

I found a recipe for grilled pineapple with coconut sorbet, and my question is where can I get a sorbet like this, or for this matter, even just plain coconut icecream? I have never seen in in any store.
