I do every thing in the receipt below, but I do it all in the Micro Wave. Have for years and years. Make all my banana puddings in the Microwave also.

I keep saying this hoping some of you will try it. You will never need to stand at a double boiler again.

I like this one and have made it several times.


Coconut Cream Pie
3/4 cup sugar
3 egg yolks (slightly beaten)
1/3 cup all purpose flour
2 Tbsp. butter
1/4 tsp. salt
1 tsp. vanilla
2 cups milk
1 cup flaked coconut
Combine sugar, flour and salt. Gradually stir in milk. Cook and stir over medium heat until bubbly. Cook and stir 2 minutes longer. Remove from heat. Stir small amount of mixture into egg yolks. Return to hot mixture and cook 2 minutes longer, stirring constantly. Remove from heat. Add butter, vanilla and coconut. Pour into cooled, baked pastry shell. Spread meringue on top of pie and bake at 350 degrees for 12 to 15 minutes.

Coconut Pie

4 T. (1/2 stick) butter, melted

2 eggs, beaten

1 T. all purpose flour

3/4 c. sugar

1 (3 1/2 oz) can shredded sweetened coconut (about 1 cup)

1 cup coconut milk

1 (9 inch) pie shell

Preheat oven to 350 degrees F. In a large bowl, combine melted butter, eggs, flour, sugar, coconut, and milk. Pour into pie shell. Bake until firm, about 45 to 60 minutes

Does anyone know good recipe for a coconut pie? I'd like to make one but don't have a lot of recipes.
