Coconut Pie

Coconut Tart or pie
1 stick of margerine melted
3 eggs
1 1/4 cup sugar
1/4 cup buttermilk
1 tsp vanilla
1 1/2 cup coconut
Pre heat oven to 350º
Makes 1 pie or 12 tarts
Bake for 35 minutes for tarts ot till done
4o minutes for pies

ngredients:
4 eggs
1/4 cup margarine
1 cup white sugar
1/2 cup plain (all purpose) flour
1/4 teaspoon salt
1/2 teaspoon baking powder
2 cups milk
1 cup coconut
1/2 teaspoon vanilla

Directions:

Put all ingredients into a blender and blend well. Pour into a buttered 10 inch pie dish Bake at 350F or gas mark 4 for 1 hour When cooked the crust will be at the bottom, the custard in the centre and the coconut on the top.

Bushman, I made this Coconut Pie last night. It turned out a bit runny in the center, but Hubby LOVED it! Thanks for sharing!!!

Coconut Pie
3 eggs, beaten
1 1/2 cups sugar
1/2 cup butter or margarine, melted
4 teaspoons fresh lemon juice
1 teaspoon vanilla
1 1/3 cups grated coconut (3 ounce can)
pinch salt
1 unbaked pie pastry, 9-inch
Preheat oven to 350°. Combine eggs, sugar, butter, lemon juice, vanilla,
and salt; mix well. Stir in coconut; pour into pie shell and bake for 30 minutes.
Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge.
Bake for 10 to 20 minutes longer, until set and no longer jiggly.
As the pie bakes, a golden topping forms on the surface.
Chill thoroughly before serving.
The pie will be gooey if served at room temperature.
Serves 6.

My dad has been sick since November, and has lost 20 pounds, which would have been great if he was on a diet, but he isn't and wasn't-- he is in that much pain.
He loves K & W's Coconut Pie, I've tried Glenn's and E & J's, but neither are as good as K & W. Can someone PLEASE recommend a place here with really good coconut pie, or better yet send me a receipe and I'll make him one.
