I got this recipe out of the Winston-Salem paper. They placed third in a cookie contest and we have loved them. Not too hard to make either:

LACE COOKIES
1 egg
3 cups brown sugar
2 cups quick-cooking oats
1 cup melted butter
1 teaspoon vanilla extract
Pinch of salt
1/2 cup chopped pecans or other nuts (I have to leave this out because of allergies)
Two baking sheets works well, because you can put one batch in to bake while you remove the first batch, etc.

(1) Heat oven to 350. Mix all ingredients in a bowl until well combined.
You can do this by hand. No need to get out the mixer.
(2) Line baking sheets with parchment paper or no-stick aluminum foil.
Drop batter 3/4 teaspoon at a time on baking sheet, leaving plenty of
space between each. Cookies will spread to 4 or 5 inches in
diameter when baked.
(3) Bake 10 to 12 minutes, until thin and golden. Check early to make
sure they don't overbrown. You don't want them overbaked.
(4) Line a wire rack with wax paper. Carefully remove cookies from
baking sheet. They will be sticky, and a thin, metal spatula works
best. GENTLY transfer to wax paper on wire rack to cool.

Once you get the "hang" of the whole process, it is quite simple and goes relatively fast.
