Found this recipe and tried it tonight, and it was so good and easy that I had to share!

Chipotle Chicken and Rice

1 jar chipotle cheddar cheese sauce
1 cup uncooked rice
2 cups water
4 large chicken breast halves (about 1 1/4 lb.)
1 cup shredded sharp cheddar cheese

Preheat oven to 350 degrees. In 9 x 13” pan, add rice, chipotle cheddar cheese sauce and water. Stir until mixed thoroughly. Place chicken breasts on top of the mizture. Cover pan with foil and bake for 45 minutes. Uncover and top with shredded cheddar. Bake uncovered for 10 minutes or until cheese is melted. Serves 4.
