Chili Beans

Simple Chili


1 lb. ground turkey or lean ground beef
1/2 med. onion, chopped
1/2 green pepper, chopped
1 10 oz.can tomato soup
1 15oz can red kidney beans
1 15 oz can Chili beans
1 15 oz. can diced tomatoes with green chiles
1 Heaping teaspoon Chili powder
2 cloves garlic minced or garlic powder to taste.
Black pepper to taste

For a milder version use diced tomatoes without green chiles and add 1 tablespoon Lousiana hot sauce.


Brown meat, add onions and green pepper when almost done and finish browning. Add other ingredients, bring to boil,reduce heat and simmer 30 minutes.

BASIC CHILI


2 lb. lean ground beef
1 c. chopped onion
2 garlic cloves, crushed
1 tsp. oregano
1 tbsp. ground ***in
1 tsp. salt
2 (15 oz.) cans tomatoes
1 (15 oz.) can tomato sauce
3 tbsp. chili powder
3 tbsp. plain flour
3 tbsp. water
1 can kidney beans (optional)
Cayenne pepper, to taste


In a 4-5 quart Dutch oven, brown beef. Add onions and garlic. Cook until onions are transparent. Add herbs, salt, tomatoes, tomato sauce, and chili powder. Simmer about 1 hour, stirring occasionally. Blend flour and water to mixture. Stir well and cook 20 minutes.

Camp Chili Beans
1 pound hot sausage
2 cups chopped onion
1 cup chopped green bell pepper
8 garlic cloves, minced
1 pound ground sirloin
2 jalapeno peppers, chopped
3 tablespoons chili powder
2 tablespoons brown sugar
1 tablespoon ground ***in
3 tablespoons tomato paste
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 bay leaves
1 1/4 cups Merlot or other fruity red wine
2 (28-oz.) cans whole tomatoes, undrained and coarsely chopped
2 (15-oz.) cans kidney beans, drained
1/2 cup (2-oz.) shredded reduced fat sharp cheddar cheese
Heat a large Dutch oven over medium-high heat.
Add sausage, onion, and the next 4 ingredients (onion through jalapeno) to pan;
cook 8 minutes or until sausage and beef are browned, stirring to crumble.
Add chili powder and the next 7 ingredients (chili powder through bay leaves),
and cook for1 minute, stirring constantly.
Stir in wine, tomatoes, and kidney beans; bring to a boil.
Cover, reduce heat, and simmer 1 hour, stirring occasionally.
Uncover and cook for 30 minutes, stirring occasionally.
Discard the bay leaves. Sprinkle each serving with cheddar cheese.
Note: Like most chilis, this version tastes even better the next day

Simple Chilibeans
2 pounds ground beef
1/2 onion, chopped
1 teaspoon ground black pepper
1/2 teaspoon garlic salt
2 1/2 cups tomato sauce
1 (8 ounce) jar salsa (I like Pace HOT)
4 tablespoons chili seasoning mix
1 (15 ounce) can light red kidney beans
1 (15 ounce) can dark red kidney beans

In a large saucepan over medium heat,
combine the ground beef and the onion and saute for 10 minutes,
or until meat is browned and onion is tender.
Drain grease, if desired.
Add the ground black pepper, garlic salt, tomato sauce, salsa,
chili seasoning mix and kidney beans.
Mix well, reduce heat to low and simmer for at least an hour.
Wendy's Chili
2 lb ground beef
1 x 29 oz can tomato sauce
1 x 29 oz can kidney beans (with liquid)
1 x 29 oz can pinto beans (with liquid)
1 cup diced onion (1 medium onion)
½ cup diced green chili (2 chilies)
¼ cup diced celery (1 stalk)
3 medium tomatoes, chopped
2 tspn ***in powder
3 tbsp chili powder
1 ½ tspn black pepper
2 tspn salt
2 cups water
Preparation and Cooking Instructions :
Brown the ground beef in a skillet over medium heat; drain off the fat.
Using a fork, crumble the cooked beef into pea-size pieces.
In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat.
Cook, stirring every 15 minutes, for 2 to 3 hours.

Wendy's Chili recipe 2
1 ½ lb ground beef
2 tspn vegetable oil
1 x 10¾ oz can onion soup
2 tspn chili powder
2 tspn ground ***in
½ tspn pepper
2 tspn cocoa
2 cans kidney beans, undrained
6 tspn tomato paste
15 tspn tomato sauce
2 tspn brown sugar
1 tspn vinegar
6 cups v8 juice
Brown beef in oil. Break meat into tiny rice size pieces.
Place onion soup and half of cooked beef into a blender and process on high speed until it resembles cement mortar. Place with uncooked beef into 4 qt saucepan.
Add remaining ingredients and simmer until flavors are blended
Cook for 2 1/2 hours on low.

Now for a really easy recipe:

4 cans Bush's Chili Beans
1 large can rotel tomatoes with chile peppers
1 lb ground beef
1 large onion - diced

Fry ground beef until brown, drain grease, add diced onion and cook until tender. Add beans and rotel tomatoes and simmer for about an hour.

Tailgate Chili Beans
Ingredients:

* 8 ounces dried pinto beans
* 3 cans (14.5 ounces each) diced tomatoes
* 2 large green bell peppers, seeded and chopped
* 2 tablespoons vegetable oil
* 4 cups chopped onions, about 4 large onions
* 3 cloves garlic, minced
* 1/4 cup chopped parsley
* 3 tablespoons butter or margarine
* 3 pounds lean ground beef
* 1/4 cup chili powder
* 4 to 5 teaspoons salt, or to taste
* 1 teaspoon ground black pepper
* 1 teaspoon ground ***in

Preparation:
Pick over pinto beans; rinse. Place beans in a large bowl; cover with water and let stand overnight in refrigerator. Drain before cooking. Place drained beans in a large Dutch oven or pot; add water to cover. Bring to a boil; reduce heat, cover and simmer for about 45 minutes, or until beans are tender. Bean skins should burst when you blow on a few in a spoon. Add tomatoes and simmer for 5 minutes. Set beans aside. In a skillet in 2 tablespoons of vegetable oil, sauté chopped onions and bell pepper until soft, stirring frequently. Add garlic and chopped parsley. In a large skillet melt 3 tablespoons butter; or margarine and brown ground beef lightly. With slotted spoon, transfer beef to the onion mixture; stir in chili powder and cook for 10 minutes. Add beef mixture to beans and stir in pepper, ground ***in, and salt to taste. Cover and simmer for 1 hour. Remove cover and continue cooking for about 30 minutes. Skim off excess fat before serving pinto bean recipe. This pinto bean recipe serves 8.
