Chili Beans

Spicy Chilli Beans ( no meat)
Serve these beans with cornbread and slaw for a great meatless dinner.
16 ounces dried dark redf kidneybeans, rinsed and picked over, soaked overnight
1 large chopped onion
1/2 cup chopped green bell pepper
2 jalapenos chopped fine
2 medium cloves garlic, minced
1 28 oz can diced tomatos
5 cups water, or to cover
2 tablespoons chili powder
1/2 teaspoon ground ***in
1 1/2 teaspoons salt
1 teaspoon pepper
2 tbs Tabasco sauce
1tsp liquid smoke
hot sauce to taste
Cover rinsed and sorted beans with water; cover bowl and let soak overnight.
Drain beans; combine all ingredients in slow cooker.
Cover and cook on HIGH for 6 to 10 hours, or until beans are tender.

Easy Chili Beans

1 lb lean ground beef
3 cansdark red kidney beans, juice and all
1 can pinto beans, juice and all
1 jar mild or hot salsa
1 pkg lipton onion soup mix
1 cup ketchup
1 T chili powder
salt and pepper to taste

brown the beef and dont drain all the grease, leave some for taste. add all ingredients to crock pot. the salsa contains the hot peppers, green peppers and tomatoes. you can add a bit of water to the consistency you desire. cook 3-4 hours on low. eat and enjoy

White Bean Chili

1 pound dried navy beans
5 cups chicken stock
4 tablespoons (1/2 stick) butter
1 tablespoon minced garlic
3/4 cup diced onion
1 1/2 cups chopped green chiles (fresh or canned)
1 pound boneless, skinless chicken breasts, finely chopped
1 tablespoon ground ***in
1 tablespoon dried oregano
1 to 2 teaspoons ground black pepper
1/2 teaspoon white pepper
Pinch red pepper flakes
1/2 bunch cilantro leaves, chopped

Rinse beans well, cover with cool water, and soak for 2 hours. Drain. Place beans in large pot with chicken stock and bring to a boil over high heat. In a saucepan, heat butter over medium heat. Add garlic, onion, and chiles and saute for 5 minutes. Add chile mixture to pot with beans. Add chicken, ***in, oregano, pepper, white pepper, red pepper flakes, and cilantro. Lower heat to medium and cook, stirring occasionally, for approximately 1 1/2 hours. Serve with cornbread, if desired.

Six-Pack Chili

Kit Carson's last words were, "I wish I had time for one more bowl of chili." He had the right idea - you shouldn't take anything too seriously, except maybe chili. Chili was given to us by the gods especially to go with good music, good friends, good beer, and good times. If this recipe doesn't do that for you, then you don't have a pulse.
1 6-pack of Corona beer, chilled
2 1/2 lb tri-tip roast, cut into 1/2" cubes
2 1/2 lb ground chuck
1/2 tablespoons dried mexican oregano
7 tablespoons Gephart's chili powder
1 tablespoon ground ***in
1 tablespoon paprika
2 large Vidalia onions, diced
6 cloves garlic, minced
1 red bell pepper, diced
1/2 can chipotle peppers in adobo sauce, diced (about 4-5)
1 jalapeno pepper, seeded and diced
1 4-oz can diced green chiles
15-oz can crushed tomatoes
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
Masa Harina
Salt and pepper to taste
Sour cream
Your favorite salsa

1. Drink a beer and read the directions. 2. In a large Dutch oven brown the beef with 2 TBL chili powder. Drain the fat, but don't go overboard cause there's lots of flavor in there. Add two beers, the rest of the chili powder, oregano, ***in, paprika and get it to start to boil. Simmer for an hour. 3. Have a beer to reward yourself for all that hard work. 4. Heat up a skillet and caramelize the onions. During the last couple of minutes, add the garlic and saute. Add onion and garlic to the chili along with chipotles, jalapeno, green chiles, red bell pepper, and tomatos. Simmer another 1-2 hours. 5. You'll want another beer here. Make sure your friends have put on some kickin tunes. 6. Add sugar and vinegar. Whisk together equal parts of Masa Harina and cold water (I use about 1/3 cup each). Bring to a boil and stir until it thickens. Season to taste. 7. Ladle into bowls, top with sour cream and salsa. Serve hot sauce on the side. 8. Open your final beer and enjoy the fruits of your labor. Try not to get a swelled head from all the compliments.

Award Winning Chili
----
3 lbs coarse ground chuck
3 lbs cubed beef stew meat
1/3 cup Extra virgin Olive oil
4 jalapeno peppers 3 seeded & minced 1 whole
4 poblano peppers chopped & seeded
1 large red bell pepper
1 large green bell pepper
1 large onion
1 bulb chopped garlic
3 dried ancho chilies seeded
2 dried seeded chili negros
3 dried seeded chili (red new Mexico)
5 Tbsp standard chili powder
2 Tbsp ***in
1 tsp black pepper
1 tsp adobo seasoning
1 Tbsp beef base
2 cups water or beer
28oz chopped tomatoes (canned )
29oz canned black beans
Saute meat till browned in olive oil , drain the meat , add all the
peppers onions and garlic and spices saute for 15 mins till onion is
translucent . Mix beef base with water or beer, and add to the beef and
veggie mixture, simmer on low for about half hour , add tomatoes and beans
, and continue to simmer till the cubed stew meat is very tender. (could be more than a couple hours)
mine took almost 3 hours, for stew meat to be tender

Wendy's Chili
2 lb ground beef
1 x 29 oz can tomato sauce
1 x 29 oz can kidney beans (with liquid)
1 x 29 oz can pinto beans (with liquid)
1 cup diced onion (1 medium onion)
½ cup diced green chili (2 chilies)
¼ cup diced celery (1 stalk)
3 medium tomatoes, chopped
2 tspn ***in powder
3 tbsp chili powder
1 ½ tspn black pepper
2 tspn salt
2 cups water
Preparation and Cooking Instructions :
Brown the ground beef in a skillet over medium heat; drain off the fat.
Using a fork, crumble the cooked beef into pea-size pieces.
In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat.
Cook, stirring every 15 minutes, for 2 to 3 hours.

Wendy's Chili recipe 2
1 ½ lb ground beef
2 tspn vegetable oil
1 x 10¾ oz can onion soup
2 tspn chili powder
2 tspn ground ***in
½ tspn pepper
2 tspn cocoa
2 cans kidney beans, undrained
6 tspn tomato paste
15 tspn tomato sauce
2 tspn brown sugar
1 tspn vinegar
6 cups v8 juice
Brown beef in oil. Break meat into tiny rice size pieces.
Place onion soup and half of cooked beef into a blender and process on high speed until it resembles cement mortar. Place with uncooked beef into 4 qt saucepan.
Add remaining ingredients and simmer until flavors are blended
Cook for 2 1/2 hours on low.

1 lb ground beef
1 med chopped onion (I like sweet onion)
1 can of petite diced tomatoes
1 can tomato sauce
1 can kidney beans (dark or light)
2 Tblsp chili powder
1 teasp ***in

Brown ground beef with onion and drain. Add remaining ingredients and simmer uncovered for 30mins.
