Chicken with Drop Dumplings
1 stewing chicken, about 5 pounds
2 tablespoons butter
2 tablespoons olive oil
4 cups water
1 rib celery, diced
1/2 cup chopped onion
1 clove garlic, minced
1/2 teaspoon dried thyme leaves
1 teaspoon dried parsley leaves
1 bay leaf
1 teaspoon seasoned salt
1/2 teaspoon pepper
3 tablespoons flour
Dumplings
1 cup sifted self rising flour
1/2 teaspoon poultry seasoning
1/2 teaspoon salt
1 tablespoon shortening
1 egg
3 tablespoons milk
In a Dutch oven or stock pot over medium heat,
brown chicken on all sides in butter and olive oil mixture.
Add water, celery, onion, garlic, thyme, parsley, bay leaf, salt, and pepper.
Cover and bring to a boil; simmer for 2 to 3 hours, or until chicken is tender.
Remove chicken; remove meat from bones and return meat to pot.
Put flour in a cup; blend in enough cold water to make a smooth paste.
Stir flour paste into hot stew, stirring until thickened.
Prepare dumpling batter,
Combine flour, poultry seasoning and salt.
Cut shortening into flour mixture.
In a separate bowl, whisk together egg and milk;
add to dry mixture and stir with fork until well blended.
Drop dumplings by teaspoonfuls onto chicken pieces.
Cover and steam for 10 minutes, or until dumplings are fluffy and done inside

i keep my chicken on the bone alive and just eat the eggs. lol your kids might like that too...

Beer Butt Chicken

Take 1 whole chicken,

1 can of beer (8 or 16 oz depending on size of chicken)

Salt and pepper to taste

Preheat oven to 350

Wash and pat dry chicken

rub with salt and pepper

Drink 1/2 of the beer

Place can of beer in center of baking pan

Sit the chicken down on the beer can

Place in oven

Bake 45-60 mins. or until done

Remove from oven, allow to rest on can for 10-15 mins.

Remove from can

Serve as whole carving hen.

Pepsi Chicken

4-6 chicken breasts
1 (16 ounce) bottle Pepsi
1/2-1 cup margarine
1 cup ketchup
Put Pepsi, margarine, and Ketchup into a 6-quart saucepan.
Stir and heat until margarine melts.
Add chicken and cook over medium heat for 45 minutes or until meat is done.
The sauce will thicken as it cools.
Excellent barbecue taste!

Chicken & Dumplings
3 large or 4 small boneless, skinless chicken breasts
1 Tbsp. butter
1 can condensed celery soup
2 cups Bisquick
2/3 cup milk
Melt butter in Dutch Oven.
Brown chicken breasts on both sides.
Add enough water to condensed soup to make
1 quart of broth (it will dissolve
more readily if heated in the microwave for about 3 minutes.
Pour over chicken and bring to a boil.
Mix Bisquick and milk, drop batter by spoonfuls into broth.
Cover and cook 20 minutes.
This produces a very
soft dumpling that is permeated with the flavor of the broth.
If you prefer bread-like dumplings,
cook uncovered for the first 10 minutes.

Diet Cola Chicken
1 ½ to 2 lbs boneless skinless chicken breast
2 cups Diet Cola (I used Lemon Lime , Cola is great too)
1 cup ketchup
1 TBSP hot sauce (optional)
1 small onion (optional)

Cut chicken in pieces about 1 inch cubes or bite sized pieces,
remove all visible fat.
Set aside.
In a skillet add ketchup and soda. Mix together.
Add cut up chicken pieces and chopped onion if desired.
Stir mixture to coat chicken pieces. Cook at
medium to medium low (250-300 degrees) until mixture coats
chicken like a thick bbq sauce, about 30 minutes.
Stir occasionally while cooking to be sure chicken has cooked.
Add hot sauce if you like zesty foods.
Serve with rice or as an entree'.
Makes 4 to 6 Servings

BEER-BATTER FRIED CHICKEN

1 3/4 c. sifted all-purpose flour
1 1/2 tsp. salt (optional)
1/2 tsp. pepper
1 1/2 tsp. Season All
1 (12 oz.) can beer
Vegetable oil
6 chicken breasts (or desired parts)

If Season Salt is used, omit salt portion.
Combine sifted flour and salt, pepper, Season All in medium bowl. Beat in beer with wire whisk or egg beater until smooth. Let stand 30 minutes. Pour vegetable oil in large skillet to equal 1-inch depth. Heat deep fryer to 375 degrees on thermometer or until a cube of bread turns golden brown within 60 seconds.

Dip chicken pieces into beer batter one at a time. Let excess batter to drain back into bowl. Fry chicken pieces, turning once, for 30 minutes or until chicken tests done. Place chicken on paper towel to drain. Keep chicken warm in oven until all chicken is fried. Serve with onion rings or French fries. Makes 6-8 servings.

another one my kids love is pepsi chicken, use pepsi and ketchup to make a suace to cook it in. i'm fixing to head out the door to work or i'd post it. it would probably be easy to google though.

This is a very simple recipe, but quick and easy. Pre-heat oven to 350 degrees and spray a shallow baking pan with non-stick spray. Remove skin and wash chicken pieces. Then roll in Italian seasoned bread crumbs. You can find this at save a lot very reasonable. Bake for 30 minutes and then spray tops of chicken pieces with non-stick spray. Bake for another 30 minutes.

i love the recipes posted and plan on trying them.

this is not the best with bone in chicken but i've done it with it. i take potato chip dip and coat my chicken with it real good then roll it in crushed plain potato chips and bake till it's done. my kids absolutely love it. it's best with boneless skinless chicken breast but i have done it with bone in thighs.

Captain Crunch Chicken
2 1/2 C. Captain Crunch cereal
1 C. cornflakes
1 egg
1/2 C. milk
1/2 C. flour
1 t. onion powder
1 t. garlic powder
1/3 t. black pepper
2 lb. chicken breast, cut in 1 oz. tenders
Vegetable oil for frying
Honey-Mustard Sauce
1/2 C. mayonnaise
2 T. honey
1 T. mustard
Crush the cereals and set aside. Beat the egg with milk and set aside.
Stir together the flour, onion and garlic powders and black pepper; set aside.
Dip the chicken pieces in the seasoned flour and coat well; shake off the excess flour.
Dip in the egg wash, coating well, then dip in the cereal mixture, coating well.
Heat oil in skillet.
Drop coated chicken tenders carefully in hot oil and cook until golden brown and fully cooked, 3-5 minutes depending on size.
Drain and serve immediately with sauce.
For sauce, combine all ingredients and mix well.
Crispy Oven-Fried Chicken
1/2 C skim milk or buttermilk
1 tsp poultry seasoning
1 C cornflakes, crumbled
1 1/2 Tbsp onion powder
1 1/2 Tbsp garlic powder
2 tsp black pepper
2 tsp dried hot pepper, crushed
1 tsp ginger, ground
8 pieces chicken, skinless (4 breasts, 4 drumsticks)
a few shakes of paprika
1 tsp vegetable oil
1. Preheat oven to 350 °F.
2. Add 1/2 teaspoon of poultry seasoning to milk.
3. Combine all other spices with cornflake crumbs
and place in plastic bag.
4. Wash chicken and pat dry. Dip chicken into milk,
shake to remove excess, then quickly shake in bag
with seasoning and crumbs.
5. Refrigerate for 1 hour.
6. Remove from refrigerator and sprinkle lightly with
paprika for color.
7. Evenly space chicken on greased baking pan.
8. Cover with aluminum foil and bake for 40 minutes. Remove foil
and continue baking for an added 30–40 minutes or until meat can
be easily pulled away from bone with fork. Drumsticks may require
less baking time than breasts. (Do not turn chicken during baking.)
Crumbs will form crispy "skin."
Kids will love this chicken it tastes batter dipped and fried,
but is actually good for the heart. Yield: 6 servings
Serving size: 1/2 breast or 2 small drumsticks
Each serving provides: - Calories: 256 - Total fat: 5 g
Saturated fat: 1 g - Cholesterol: 82 mg - Sodium: 286 mg
Total fiber: 1 g - Protein: 30 g - Carbohydrates: 22 g
Potassium: 339 mg
Roasted Chicken with Smokey Orange Sauce
Cooking spray
8 (5-ounce) skinless chicken breast halves (with bone)
Salt and ground black pepper
1 cup orange marmalade
1 tablespoon reduced-sodium soy sauce
1 teaspoon liquid smoke
Preheat oven to 400º F. Coat a large roasting pan with cooking spray.
Season chicken all over with salt and black pepper.
Arrange chicken in prepared pan and set aside.
In a small bowl, combine orange marmalade, soy sauce and liquid smoke.
Mix until blended. Pour mixture over chicken.
Roast 35 minutes, until chicken is cooked through.
Serve 4 chicken breast halves with this meal and refrigerate
remaining chicken until ready to use.
