Chicken Salad
You can use leftover chicken or canned chicken.
Chop up two cups meat very well.
Put this in a bowl and add
one cup chopped celery,
1 tablespoon parsley ,
1/2 cup chopped pecans ,
one cup chopped apple [ peel as well],
1/2 cup sliced seedless grapes,
and either 1/2-1 mayo, or for a new twist,
1/4 cup vinaigrette,
Mix really good.
May add1/4 cup raisins.
Served on lettuce with crisp breads, or great in a sandwich.
