Boil chicken, remove from bone, and run thru your food processer. It does better if you put the cooked, boned chicken in the fridge and let it chill before you put it in the food processer. After you get it chopped up really well, dump into a big bowl and mix in black pepper, salt, pickle relish, mustard, and mayo to your preferred taste and consistency. Store in covered container in fridge. We use for sandwich spread.

Use chicken instead of ground beef in spaghetti...very good!
I love to cook up chicken breasts with onions and peppers and seasoning and serve them in pita bread.
Chicken nachos are great.

There are tons of ideas for chicken.
Chicken Alfredo, Chicken Parmasean, Chicken Pie, Chicken Casserole, Grilled Chicken Cesar Salad, Fried Chicken Tenders, Chicken Dumplings, Homemade Chicken Noodle Soup.
The possibilities are ENDLESS.
This is a recipie I kinda came up with myself, I call it BBQ chicken bake.
I take chicken breasts (however many you like) coat them in BBQ sauce and bake them in the oven until they are done, take them out and pile on more BBQ sauce, cooked bacon, mushrooms, and cheddar cheese, then stick back in the oven until the cheese is melted, fix some of that ranch dressing from the packets...and ENJOY. I usually fix some garlic mashed potatoes, rolls, and steamed veggies to go with it.
It's my take on a meal I enjoy when I go out, Ruby Tuesdays used to have something simillar, but with breaded chicken tenders.

White Cheddar Cheese Crackers chicken 2 eggs, beaten with 2 tbsp milk 1/2 C flour 1/4 cup Parmesan cheese, grated garlic cloves (amount depends on how much you like) salt and pepper to taste
Heat oil in skillet with garlic. Put "White Cheddar Cheeze-It" crackers in a large bag with flour, salt and pepper. Crush with rolling pin. Dip chicken in egg mixture and place in cracker bag. Coat well. Place in grease and fry until chicken is no longer pink. Top with Parmesan cheese. My eleven year old daughter made up this recipe. Our entire family loved it. There wasn't one piece left.
