Chicken Casserole and Tuna Casserole

4 to 6 boneless chicken breast
1 cup sour cream
3 teaspoons poppy seeds
1 and 1/2 rolls Ritz crackers
2 cans cream of chicken soup(can substitute1 can with Mushroom soup if desired)
1 cup chicken broth (can used broth from cooked chicken)
1 and 1/2 cup margarine melted

season chicken with salt and pepper to taste. cook chicken until done. Let cool. Mix soups, broth, sour cream and poppy seeds in separate bowl. Tear chicken into bite size pieces and mix with soup mixture. Pour into 9x13 baking pan sprayed with cooking spray. Crush the Ritz crackers and add them to the melted margarine. Pour this over top of chicken/soup mixture. Bake on 350 degrees for 40 to 45 minutes or until crumb mixture browns.

3-4 boneless skinless chicken breasts
1 can cream of chicken
1 can cream of mushroom
8 oz sour cream
1 package herb stuffing
salt & pepper to taste

Cook chicken breasts until tender. Pull apart and put in a casserole dish.
Mix together both cans of soup and sour cream. Pour over chicken.
Spread herb stuffing on the top. Ladel some of the broth from cooking the chicken over the top of the stuffing.
Bake at 350 for 20-30 min. until brown.

Boil whole chicken plus 2-3 breasts (bone in) until cooked.

Take out of stock pot and cool. While chicken is cooling boil your stock so the flavor is concentrated..you will need 1 1/2 cups for the stuffing.

Pull chicken off the bone and place in casserole dish.

Add cream of chicken, cream of celery and a full can of milk and mix well.

Pour over chicken.

Once you have approx. 1 1/2 cups of chicken stock, add stick of margerine and herb stuffing and fluff with fork. Add to casserole dish.

Bake at 350 for 20-30 minutes..until brown.

Tuna Noodle Casserole

3 cups medium noodles
1/4 cup dry bread crumbs
1 tbsp butter
10 3/4 oz can of cream of mushroom soup
3/4 cup milk
1 - 9 1/2 oz tuna (drained)

Cook noddles and place aside
1 tbsp butter and bread crumbs (mix together) and set aside
Mix tuna, cream of mushroom, and milk together then add the noodles. Transfer to a 1 1/2 qt casserole dish and place the bread crumb mixture on top.

Bake uncovered in 375 oven for 20 minutes. Serves 4.

My kids love it and eat everything so I don't have any leftovers.
