boswell, there sure are some good cooks on here and some great recipes. i have used several of them myself that i have gotten from this site and they have always turned out really well. i hope you enjoy this site as much as i do

Thanks Naturalman & Bushman. I have read both of your recipes on here before. Sounds like you both enjoy cooking and are good at it. I made some chicken bites on my own. Deep fat fried for about 20 min. and added hot sauce. They were so hard I couldn't eat them. Dog did not appreciate the hot sauce. I have a tendancy to overcook chicken. Thanks again. I will surely be asking for help again as I am new to this kitchen/cooking deal. I figure what I save on gas, I can spend on food.

Captain Crunch Chicken 2 1/2 C. Captain Crunch cereal 1 C. cornflakes 1 egg 1/2 C. milk 1/2 C. flour 1 t. onion powder 1 t. garlic powder 1/3 t. black pepper 2 lb. chicken breast, cut in 1 oz. tenders Vegetable oil for frying Honey-Mustard Sauce 1/2 C. mayonnaise 2 T. honey 1 T. mustard Crush the cereals and set aside. Beat the egg with milk and set aside. Stir together the flour, onion and garlic powders and black pepper; set aside. Dip the chicken pieces in the seasoned flour and coat well; shake off the excess flour. Dip in the egg wash, coating well, then dip in the cereal mixture, coating well. Heat oil in skillet. Drop coated chicken tenders carefully in hot oil and cook until golden brown and fully cooked, 3-5 minutes depending on size. Drain and serve immediately with sauce. For sauce, combine all ingredients and mix well.

Thanks Ladyhawk47 for the recipe. I did try it and it was delicious. I am also going to try the others. Thanks all for your help. "LOVE CHICKEN BITES". I am not much of a cook but I'm trying to learn. I do see alot of goods cooks on here both male and female. Thanks again. This may be my favorite thread.

HOT & SPICY CHICKEN
3 chicken breasts (bite-size pieces) 10 oz. pkg. frozen corn 1/2 c. chicken broth 1/2 c. sliced celery 1 onion, thin wedges 1/2 c. salsa picante 4 tsp. cornstarch 1 (8 1/2 oz.) pkg. corn bread mix 1 1/2 c. shredded Cheddar cheese 2 (4 oz.) cans diced green chili peppers
Combine chicken, corn, broth, celery and onion in saucepan. Bring to a boil. Reduce heat. Simmer uncovered 10-15 minutes. Add salsa. Stir 2 tablespoons water into cornstarch. Add to chicken mixture. Cook and stir until bubbly. Cook 2 minutes more.
Prepare corn bread according to package directions. Pour chicken mixture into 10 x 6 x 2 inch casserole dish. Sprinkle with cheese and chilies. Spoon corn bread mixture on top. Bake at 425 degrees for 20 minutes.

CHICKEN HOT BITES
COATING ONE:
1/2 c. mayonnaise 1 tsp. mustard 1 tsp. onion, chopped 1/4 tsp. pepper
COATING TWO:
1/2 c. bread crumbs 1/2 sesame seeds 2 tsp. parsley, chopped 2 c. chicken, cubed
Coat chicken with coating one and then coating two. Bake in preheated oven at 425 degrees for 10 to 12 minutes on ungreased cookie sheet. Serve hot with dip.
DIP:
3/4 c. mayonnaise 2 tbsp. honey 1/2 tsp. Dijon mustard

BITE-SIZED CHICKEN BALLS
1 c. cooked chicken, finely chopped 1 tbsp. finely chopped celery 1 tbsp. finely chopped onion 2 tbsp. finely chopped pimiento, drained 1/2 c. mayonnaise 1/8 tsp. hot pepper sauce 1 c. finely chopped nuts (optional)
Combine all ingredients and mix well. Chill overnight in the refrigerator. Shape into bite-sized balls. Makes about 24 appetizers. Drained tuna may be substituted for the chicken, if desired.

CHICKEN BITES
1 pkg. boneless chicken 1 1/3 c. Pepperidge Farm stuffing, crushed 1/2 c. Parmesan cheese 1/4 tsp. garlic salt 3/4 tsp. salt 1/8 tsp. pepper 1 stick butter, melted
Cut chicken into bite-size pieces. Dip chicken in melted butter. Mix together all other ingredients. Roll chicken in dry ingredients until covered. Place on cookie sheet and bake at 350 degrees for 15 to 20 minutes. (To crush stuffing, I use a rolling pin and plastic bag.)

Get some italian seasoned bread crumbs and spice'em up with chili powder and/or other hot powdered stuff. dip chicken bites in beaten egg. roll in crumbs and place on a shallow baking pan after you spray it with non-stick spray. bake for about 15 minutes and spray non-stick spray all over top of chicken really well. bake probably for another 15 minutes. 350 degree oven. time depends on size of chicken pieces

I have gone back several pages and found no recipe. If anyone has a good simple recipe I need one quickly. I have my chicken breast cut up but thats as far as I can go without help. I like them a little hot but not too hot .HELP me someone-anyone. Thanks.
