Potato Casserole
1 Large Bag Frozen Shredded Potatoes (Hash Browns),
thawed and crumbled
1 Medium Onion, chopped fine
3 TBS Butter, melted
1 Pint Sour Cream
2 C Shredded Sharp Cheddar Cheese
1 Can Cream of Chicken Soup
1 bag seasoned stuffing mix

Mix all ingredients well.
Place in ungreased 9x13 baking pan,
sprinkle with additional cheddar cheese and stuffing mix,
and bake at 375 degrees for 40 minutes.

Tater Tot Casserole


1-Can Cream of Mushroom soup
1-Bag of Tator tots
1lb of Hamburger Meat
Shredded Cheese


Brown hamburger meat and drain. Add can of soup and stir together continuously.
Let it simmer on low for 15 minutes
Put this in the bottom of a casserole dish.Lay tater tots on top.
Place in oven on 350* long enough for the tots to brown.
Sprinkle with cheese, put back in oven long enough for cheese to melt.
Then enjoy! It's really simple and easy to make and tastes really good

I was fooling around in the kitchen today and created a recipe that blew my family's socks off. I've named it:

Harvest Bake

2# Butternut Squash peeled, seeded, cubed
2 medium Sweet Potatoes, scrubbed, peeled and cubed
4-5 tart cooking Apples peeled and chopped
1/2# Sausage browned and drained
1 Onion, chopped
1/2 cup Brown Sugar
Cinnamon and Allspice to taste
1/2 stick melted butter

Pre-heat oven to 350
Layer Butternut, Sweet Potatoes, and Apples in 9x13 casserole.
Brown Sausage, remove from pan and drain on paper towels
Add onions to 2Tbsp Sausage drippings in skillet. Saute until soft and translucent.
Remove from pan and stir into Sausage.
Layer over other ingredients in dish
Sprinkle with Brown Sugar and spices.
Pour melted butter over all.
Cover with foil and bake at 350 for 1 hour.

This is a perfect combination of sweet, spicy, and savory. Add a loaf of crusty bread and you have a great working mans meal

I was proud of myself for coming up with this. My neighbor ate two helpings and begged for the recipe!

p.s., adjust the amounts of ingredients to preference. This was something that was put together today without measuring anything other than the pound of sausage I browned.

Sweet Potato Casserole
1 pound Sweet potatoes, peeled and cut into 1/2 inch pieces
2 tbsp Sugar
2 Eggs
1/2 cup milk
1 tsp. Vanilla extract
1/4 cup Brown sugar
2 tbsp All purpose flour
1/4 cup Pecans, chopped
1 tbsp Unsalted butter, melted
Preheat oven to 400 degrees.
Place potatoes in a steamer basket over boiling water.
Cover pan and steam 10 minutes or until tender.
Drain and mash.
Combine potatoes and next 4 ingredients in a bowl.
Season with salt to taste.
Mix well and pour into 9 x 9 buttered dish.
Combine remaining ingredients in a
bowl and spread over sweet potato mixture.
Bake 30 minutes or until brown.
Ranch Chicken Casserole
1 cup Onions , diced
1 cup Green Bell Peppers, diced
1/2 pound Mushrooms
1/4 cup Butter or Margarine
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 pound Cheddar Cheese, shredded
2 cups Chicken, cooked and diced
1 can Tomatoes with Green Chilis
1 clove Garlic,minced
2 tablespoon Chili Powder
1 tablespoon Chicken Broth
12 Corn Tortillas, torn into quarters
In a large pan, sauté onion, bell pepper, and mushrooms in
butter, Add soups, tomatoes & chilies, garlic, chili powder,
and chicken broth. Line bottom of a 9x13 inch pan with pieces
of tortillas. Spread half the chicken over the tortillas and
top with half of the sauce, then half of the cheese. Cover
with another layer of torn corn tortillas, and repeat the
chicken, sauce and cheese layers. Bake at 350 º F for 30
minutes or until bubbly.
Serves 6
Spicy Sausage Casserol
1 tablespoon olive oil
1 (16 ounce) package smoked sausage
1 shallot, chopped
2 cloves garlic, minced
1 (14.5 ounce) can Italian-style diced tomatoes
1 (8.75 ounce) can whole kernel corn, drained
1/3 cup frozen green peas
1 (6 ounce) can mushrooms, drained
2 green onions, chopped
1 bay leaf
1/2 teaspoon dried thyme
1 teaspoon crushed red pepper flakes
Preheat oven to 375 º F.
Heat oil in a large heavy skillet over medium-high heat.
Cook sausage until browned on both sides; remove and set aside.
Drain excess oil. Saute shallot and garlic until tender.
Stir in tomatoes, corn, peas, mushrooms and green onions.
Season with bay leaf, thyme and red pepper flakes.
Bring to a boil, then carefully transfer to a 9x13 inch baking dish.
Lay sausage on top, and cover dish tightly with foil.
Bake in preheated oven for 35 to 40 minutes.

Memphis Pinto Bean Casserole
2 cups dried pinto beans
2 tablespoons bacon drippings
1 cup sliced onions
1/4 cup chopped green bell pepper
8 to 16 ounces cubed cooked ham
1/2 cup ketchup
1/4 cup molasses
1 tablespoon vinegar
1 teaspoon salt
1 1/2 teaspoons Worcestershire sauce
1 1/2 teaspoons dried mustard
1/2 cup reserved bean cooking liquid
Following package directions, cook pinto beans until tender.
Drain beans, reserving 1/2 cup of the liquid.
Add bacon drippings to a skillet over medium heat;
add onion and green pepper and cook for 5 minutes.
Layer cooked drained beans, onions and peppers,
and ham in a 2-quart casserole.
Combine remaining ingredients and pour over the mixture.
Bake at 325 degrees for 1 hour.
Serves 6.

I'm looking for a good sweet potato casserole and other casseroles recipes. These are my favorite when going to reunions and get togethers I want to make some of my own to take this year Thanks
