I absolutely love carrot cake. I've never tried it with pineapple before. I LOVE it with golden raisins.

Carrot Cake 2 cups flour 11/2 teaspoons cinnamon 1 teaspoon salt 2 teaspoons baking soda 2 cups sugar 11/4 cups oil 4 eggs 1/2 cup chopped nuts small can of crushed pineapple, drained (optional) 2 cups grated carrots 1 teaspoon vanilla Preheat oven to 350°. Grease a tube pan with solid vegetable shortening, and then flour the pan. Sift together all dry ingredients except sugar, and set aside. Blend sugar and oil, and add eggs one at a time, beating well after each. Gradually add dry ingredients to egg and oil mixture. Add nuts and pineapple, then carrots and vanilla (Batter will be thick). Pour batter into prepared tube pan, and bake 1 hour.

I am looking for a super moist Carrot Cake (that uses coconut & fresh grated carrots). Anyone have a recipe?
