can't cook, i need an easy dinner recipe

OK, go and buy you a beef roast, chuck roast is good, and then go to the isle where the spices are and by one of those roast in bags for beef. it will be a long pack and have the bag in it along with the spices to make a good roast with potatoes and maybe an onion added to it. Just read the directions on the back of the pack, it will tell you how to fix it. Then make a salad or another vegetable and a tube of Grand biscuits or them frozen ones you can get and just bake till brown...

Okay, so I thought of another one. Chicken again. Sorry but we eat that a lot!

Here's a meal with a Mexican flair.

Buy boneless chicken breasts and cut them up. Buy a taco seasoning packet. I like the Taco Bell brand best. Empty it into a large ziploc bag and then put the chicken in there one piece at a time and shake it until it's coated. Place the coated chicken in a baking dish. Dump in a jar of your favorite salsa. Cover and bake at 350 degrees for about an hour (or until done).

Take it out of the oven, uncover, and put as much melted cheese on it as you like. Use a mexican blend cheese that comes pre-shredded. Place it in the oven just long enough for the cheese to melt. WHen you serve it, put a tablespoon of sour cream on top of each piece and make sure you get some of the salsa on the chicken as well.

This is great with a box of Old El Paso Spanish rice. It's the best Spanish rice you can get in a box.

I like to serve this with canned corn (put some butter in it, pepper, and simmer). You can also heat up a can of refried beans and top with melted cheese.

Very good and seems like it took a long time, but it's really easy!

Here's an alternative chicken recipe, but one that takes a few more steps but will seem like you really slaved over it.

Crush a tube of Ritz crackers into fine pieces. I put them in a big ziploc bag and then crush away. Put them in a large bowl. Add about 1/2 cup of grated parmesan cheese. Stir that up really well.

Get some boneless chicken breasts, cut them in half if they aren't already. Trim them up.

Melt one cube of butter (needs to be butter and not margarine). Dip the chicken in the butter and then roll it in the crackers/parm cheese until it's coated. Place it in a baking dish. If you have any left over butter, drizzle it on the chicken. If not, no worry. Cover with foil and bake for about an hour (or until done) at 350 degrees in the center of your oven. It works best to uncover the baking dish for the last 15 minutes of cooking.

This chicken is sooo good. Not good if you're watching calories, but still good!

This meal is always a hit with my family and I'd be happy to serve it for company.

Buy some chicken breast tenders, trim the fat, put them in a baking dish and pour on some Kraft Original Recipe barbecue sauce. You can't use too much. Cover and bake at 350 degrees in the center of your oven. 1 lb. of tenders will need to bake for about 50 minutes to one hour.

Buy some canned green beans. Put them in a saucepan and add either a fresh strip of bacon or buy the Hormel bacon pieces (in the salad dressing aisle) and add a bunch of those. Salt and pepper to taste, cover, and bring to a boil. Then turn them to simmer. The longer they simmer in the bacon, the better, but make sure they don't dry out. If they're covered there shouldn't be a problem. If they get dry, add a bit of water.

You can either bake some potatoes in your oven (I'm assuming you know how to do that) and then serve with sour cream and butter, or you can buy a box rice like rice a roni. They are really pretty good.

For bread, buy Sister Schubert's frozen yeast rolls. They are SUPER good and you just bake them in the oven for about 15 minutes.

For dessert, buy a frozen Key Lime Pie. YOu can find them at Lowe's or Food Lion and they are sooo good.

This meal is super easy, inexpensive, and it will seem like you put a lot more effort into than you did.

This is a really easy recipe for baked chicken I found. It's really good too.
I used to make it for my boyfriend on special occasions, along with twice baked potatoes, green beans w/ almonds and yeast rolls.


1 whole chicken (approx. 3 lb.)


2 medium lemons


Fresh lemon juice


(1/2 cup)Kosher or sea salt


Ground black pepper


Place rack in upper third of oven and preheat to 400 degrees. Wash chicken inside and out with cold water, remove the giblets, then let the chicken drain, cavity down, in a colander until it reaches room temp (about 15 minutes). Pat dry with paper towels. Pour lemon juice all over the chicken (inside and outside). Season with salt and pepper. Prick the whole lemons three times with a fork and place deep inside the cavity. (Tip: If lemons are hard, roll on countertop with your palm to get juices flowing.) Place the bird breast-side down on a rack in a roasting pan, lower heat to 350 degrees and bake uncovered for 15 minutes. Remove from oven and turn it breast-side up (use wooden spoons!); return it to oven for 35 minutes more. Test for doneness—a meat thermometer inserted in the thigh should read 180 degrees, or juices should run clear when chicken is pricked with a fork. Continue baking if necessary. Let chicken cool for a few minutes before carving. Serve with juices.

Here's an all-American favorite way to serve baked potatoes. Bake them once, scoop them out, whip them up, them pile them back into their shells. They can then be baked right away-
or wrapped up tightly and put in the fridge or freezer before being baked the second time. Bake refrigerated potatoes 30 minutes, frozen potatoes about 40 minutes.


4 large unpeeled Idaho or russet baking potatoes (8 to 10 oz each)
1/4 to 1/2 cup milk
1/4 cup butter or margarine, softened
1/4 teaspoon salt
Dash of pepper
1 cup shredded Cheddar cheese (4 oz)
1 tablespoon chopped fresh chives


1. Heat oven to 375°F. Gently scrub potatoes, but do not peel. Pierce potatoes several times with a fork to allow steam to escape while potatoes bake.
2. Bake 1 hour to 1 hour 15 minutes or until potatoes are tender when pierced in center with a fork.
3. When potatoes are cool enough to handle, cut lengthwise in half; scoop out inside, leaving a thin shell. In medium bowl, mash potatoes with potato masher or electric mixer on low speed until no lumps remain. Add milk in small amounts, beating after each addition with potato masher or electric mixer on low speed (amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used).
4. Add butter, salt and pepper; beat vigorously until potatoes are light and fluffy. Stir in cheese and chives. Fill potato shells with mashed potato mixture. Place on ungreased cookie sheet.
5. Increase oven temperature to 400°F. Bake about 20 minutes or until hot.

BACON AND PEPPER TWICE-BAKED POTATOES Stir in 1/2 cup crumbled crisply cooked bacon (8 slices) and 1/2 cup diced red bell pepper with the cheese and chives in Step 4.

HOW TO SCOOP OUT A POTATO FROM ITS SHELL
Scoop out potatoes from shells using a soup spoon. Carefully scoop out the inside of each potato half, leaving about a 1/4-inch shell.
