I always pack my deer in water when I can it. It won't hurt a thing. If you don't like the wild taste to it, you can always add a beef boullion cube to it when you can it.

If and when i get a deer, i hope to can some this year. Canned deer is great.

I always simmer my meat twice to get the blood out. Then I will put the meat and some juice in the jars. Then pressure cook for 20 mins. at 12-15 lbs pressure. It doesn't ruin the meat, that is what I had for summer tonight.

You should pack your jars very tight because the meat will shrink a little and the meat makes it's own juice. I don't know if adding water ruined it or not.

I canned deer for the first time last night in raw packs. I added water to them later I was looking at recipes online and realized they say not to add liquid in raw packs. Did I ruin this? Thank-you
