my moms just puts them in jars with a spoon of canning salt and pressure cooks them for 30 min but she only does the small new potatos hope this helps

i have canned potatoes several times. i agree with the last poster. it is most important to use a pressure canner, not the water baths used for jams and preserves.

the quality of the potatoes might be disappointing depending on your expectations. i have generally used canned ;potatoes to make mashed taters. i have never really used them to make homefries. by the time they go thru the canning process i have found they just don't hold up to the frying afterwards.

I really would caution you to USE A PRESSURE COOKER/CANNER. Botulism is not just a little food poisioning. It is deadly.

If you do not all ready own a pressure cooker, those canned potatoes will be quiet expensive.Be careful.
