Angry, unless the gent is cooking a Green Monkey from Africa (carriers of Ebola), with his deer meat then he will be safe enough as long as he processes it long enough.


Lordy, when I was a kid we canned beef, pork, pork sausage, chicken, lard, and doves in glass jars. Before my time, people corned (preserved with salt like corned beef) their meat in crocks or smoked or dried it. That's the way people survived.

I put a piece or two of the fatest beef stew I can find at the grocery store in mine to help cut down the wild taste. Wife like's it better that way.

You simply won't believe it till you try this recipe for canning deer meat!


Cut in to small pieces about or smaller than beef stew

Put in jars and fill pretty full

Fill jar appx. half full water

Put 1 heaping Tsp. full canning salt on top of meat

Put 1 heaping Tsp. of beef flavored bullion crystals on top of meat

Seal and put in pressure cooker for 1 1/2 hours at 12 psi pressure


When ready to use just warm in a sauce pan and enjoy...You will simply not believe it to be deer meat?

actually it is better for you than those vegies you buy at the store that are covered with pesticides and preservative to make them look nice. At any rate since you are not a meat eater go out side a eat some grass and leave us country folk alone

Yes angrgkid you can can meat canned deer meat is so tender and you can use the juice from the jar to make gravy. Dang I know what I want for dinner tonight canner deer with gravy over egg noodles or mash potatos and green beans or corn.

You better keep that meat boiling!!!! Once it starts, you can turn it down, but make sure the water is still boiling or you are going to have some botulism!!!!

Make sure you save Angry Kid a jar of it....

Are you using a pressure cooker canner?

I do mine for about 30 mins at 12-15 lbs of pressure.
