Lucky said someone wanted my calzone recipe. I want to say that these are not traditional, like what you might get in a restaurant but we really like them. I sort of made up the recipe from several I found. For the filling, you can put more or less of something according to your taste. You could throw in other things you like I am sure. The original recipe had spinach in it but Lucky doesn't like it so I leave it out.

Calzone filling

1/2 cup pepperoni

1-2 links italian sausage

1/4 cup sliced olives

1/2 cup shredded mozarella

1/4 cup parmesean cheese

1/2 cup spaghetti sauce

Cut the pepperoni into quarters. Fry them on low to get out as much oil as you can. Put the pepperoni on paper towels to further drain the fat. Fry the italian sausage and drain on paper towels as well. Mix the meats with olives, cheeses and spaghetti sauce.

Herbed Calzone dough

3 cups bread flour

1 cup water

1 packet instant yeast

1 teaspoon salt

2 teaspoons sugar

2 Tablespoons oil

1 Tablespoon (or more) italian seasoning (you can do part oregano, basil, parsley, etc)

Mix together all dry ingredients. Add water and oil. Mix well. Knead dough about 10 minutes. Allow to sit covered and rise until doubled in size, usually around 30-60 minutes. After that pull off a piece of dough about as big as an egg. I rub a little oil on a salad plate and press the dough on the bottom of the plate to the rim. Put the filling on half the dough and pull the other half over filling and press the edges lightly. Pick up the plate and flip it over your hand gently so the calzone falls out into your hand. Bake at 350 for 20 minutes or so until it is golden brown. You can eat these out of your hand like a hot pocket or put marinara sauce over the calzone and eat that way, or dip it in marinara.
