What is Cake Flour?
When baking a cake, most cooks aim to create a light, fluffy cake with a tender crumb. This requires a flour with a low protein content, as protein promotes the production of gluten, which can make baked goods more tough. It also means that the flour must be very finely milled, to keep baked goods from getting heavy. Finally, a flour which is starchy and able to hold large amounts of fat and sugar without collapsing is required.
This is cake flour
It makes a finer cake that holds it's shape and will stand up to heavy frosting.

This maybe a stupid question but is there a difference between regular flour and cake flour? As you can see I haven't done a lot of baking. Do you have a recipe for white cake or chocolate? Thanks

Yellow cake
2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 cup sugar
3 large eggs, room temperature
2 teaspoons vanilla
3/4 cup milk
Preparation:
Preheat oven to 350°F. Grease and flour 2 9-inch cake pans.
In bowl, combine flour, baking powder, and salt with a wire whisk.
Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix until completely combines. Slowly add flour alternately with milk. At end of addition batter should be smooth. Divide between 2 pans.
Bake for 20 to 25 minutes. Cool 5 minutes in pan, then invert onto a rack and cool completely before frosting.
For a 9 x 13 pan - Baked at 350 degrees F. for 30 to 38 minutes.

I am wanting to bake my kids cakes for their birthdays, can anyone give me recipes for yellow cake, white cake, and a good chocolate cake. And any other types you may want to share, but I really need these.
Any tips for getting the cake to come out easy from a charactor pan? I have never tried to do one of them before but want to try it. Thanks for any and all help
