Best one I know is really simple.


Place a cup of brown sugar mixed with 1/2 stick of margarine or butter in the bottom of a prebaked or graham crust. Spread across the bottom and up the sides of the crust. Add one cup chopped pecans to the bottom of the crust and press into the sugar. Make sure some adhere to the sides.


Mix one regular package of butterscotch pudding (instant or cooked jello brand) and pour over the pecans and sugar mixture. This should fill the crust. If you use a deep dish crust then you will need to use the large, family size mix. Place in refrigerator to cool. Can be served as is when it sets up or with Cool Whip or whipped cream. If you choose to use the no sugar version of Jello then consider mixing a packet of reddi-whip topping and add an extra 2 tsp of vanilla flavoring.


Quick, easy, and very good.
