Buttermilk Pie

3 eggs

2 cups sugar

1T flour

2/3 cup buttermilk

1/2 cup melted butter

1 1/2 tsp vanilla

pinch salt

8 inch unbaked pie shell

Beat eggs, combine with buttermilk. Add other ingredients and blend well. Bake 10 minutes at 275 degrees then increase to 300 degrees and bake for 50 minutes.

This recipe is from the Wilkes county Home Demonstration Club cookbook of 1947.



BUTTERMILK PIE



2 OR 3 cups of sugar ( I think this should read 2/3 cup of sugar)

2 egg yokes beaten

1/8 t salt

1 T lemon extract

1 cup buttermilk

1t lemon juice



combine sugar, flour and butter. (I know, there is no flour above so I am guessing a couple Tablespoon for thicking) Add buttermilk, salt, lemon juice and slightly beaten egg yoks. mix thoroughly. Beat egg whitles well and mix with pie filling. pour into pastry crust. Bake in hot oven.

I haven't made one in years and can't find my recipe. Does anyone have a simple version of this pie? Thanks!
