Broccoli Casserole:

2 pkg frozen broccoli
2 bags of 10 min rice
can of cream of mushroom soup
jar of cheese whiz
1/4 c chopped celery
1/4 c onion
1 tbs butter

boil broccoil as directed, as well as rice. saute celery & onions in butter until tender. mix everything together, pour in casserole dish and bake until bubbly and a little brown on top. everyone seems to love this one I never have any left.

Cream of Broccoli Soup

2 10 oz pkgs frozen chopped broccoli (store brand works well)

2 cups milk, whole, ( 2% or 1% are okay, just not as rich.)

2 10 oz cans cream of mushroom soup (or 1 ea can of Mushroom and 1 can Cream of Celery.)

1 can cheddar cream soup (or 8 to 10 oz grated cheddar [medium])

2 to 3 tbsp butter or margarine

2 tsp salt, to taste

1/2 tsp pepper

1/2 tsp tarragon (optional--some folks love it and some just hate it.)
6 tbsp all-purpose flour or corn starch

3/4 c plus 1 tbsp water

Cook broccoli in boiling, salted water until tender. Drain.

Add next 7 ingredients. Stir until well mixed.

Continue to heat until hot, but not boiling.

Whisk flour or corn starch into cool water until smooth.

Slowly stir into hot soup and bring to slow boil and begins to thicken.

Check for salt and pepper. Add more if needed.

Remove and serve with toasted "garlicky" French or Italian bread and something sweet (candied apples, candied sweet potatoes) and a diced tomato, cucumber, onion salad with mustard viniagrette or ranch dressing.


This freezes well. Freeze in gallon freezer bags, not too much so they can be frozen relatively flat for easy thawing.


NOW, FOR THE BEST PART OF THIS RECIPE:

This is also my recipe for cream of kale soup. Just add the kale to the food processor and lightly puree before adding back to pot and adding other liquids. Absolutely one of the best soups you will ever eat. This is a national Portuguese dish which is famously made in the Azores. I've also had this made with a 1/4 to 1/2 cup finely diced, moist country ham added with the kale. I've not made it myself with the country ham.)

Carrots and/or squash soup can be made using the same recipe (add 1 medium diced onion and puree with carrots and/or squash). The carrot and squash soup likes a thin tbsp sour cream served on top of soup and slightly swirled into top portion of soup.

I thought my family was the only one who liked homemade Ranch on brocolli! Of course, we like it on everything. My favorite meal is spaghetti, broccoli and cheese, salad and baked potato all with Ranch dressing drizzled over them.

Yenjifer, I like brocolli salads. You take raw brocolli, raisins, bacon, red onion and mix it together. You then mix mayo with some red wine vinegar and sugar to mix into it. If this sounds like something you would like let me know and I will look up the recipe for you.

i have a good broccoli casserole recipe somewere...if I can find it I will post the recipe. It is broccoli and cheese with ritz crackers on top. I just cant remember what all to put into the broccoli and cheese mixture.

I get fresh broccoli at the store cut it off the stem wrap it in tinfoil (kind of make a pouch) with lots of butter ( enough that it doesnt burn) salt, pepper and a little garlic salt and put the pouch on the grill until it is tender...it is soooo good I fixed it last night and its still good the next day as leftovers. I also do this with squash

1 crown broccoli, peel and cut into small florets of about 1/2";

1 zucchini and 1 yellow squash, cut in quarters lengthwise, then cut in slices 3/4 to 1" wide;

3 medium carrots, scraped and cut round, about 3/4 to 1" long;

1 large, sweet onion-preferrably Vidalia or Walla Walla;

1/2 cup low fat Italian dressing;

1 green, sweet pepper, cut in 1" cubes;

1 tsp fresh, ground pepper;

1 tsp table salt.

Mix well,

Preheat heavy bottom skillet or wok with 1 crushed clove garlic and 2 tbsp good oil (canola, olive, safflower, or sunflower)

Add vegetables to oil, stir rapidly, cover, and lower heat to low. Stir occasionally to cook to crisp/done state.

If you don't want to cook in oil then place mixture to steamer bag and cook for 5 minutes (or to your taste).

This is same recipe as Applebee's steamed, mixed vegetables...only difference is theirs are steamed on a flat grill or steamed in microwave, depending on store.
