4 eggs beaten
2 sticks melted butter
1 medium onion chopped
1 12 oz carton cottage cheese
1 pkg chopped broccoli thawed
2 boxes jiffy cornbread mix

mix together eggs, butter, onion, cottage cheese and broccoli, add cornbread mix and stir well. put in your cast iron skillet and bake at 350 degrees for 45 min to one hour.

great with some soup on these cold winter evenings
