my breakfast casserole has no potatoes. I do have a Farmers breakfast that is great but it isn't a casserole just ingredients cooked together. Here is breakfast casserole. It is wonderful and everyone wants more when the dish is empty.

6 jumbo eggs
1 package of shredded sharp cheddar cheese
1 pound of sausage - cooked and drained
2 cups of half and half
6 slices of think bread such as Texas toast or french bread
pepper to taste - @ 1 teaspoon
seasoned salt to tast @ 1 teaspoon
2 teaspoon dry mustard

put cooked sausage in large mixing bowl. add cheese. add bread which you have broken into tiny pieces. stir. mix in separate bowl the eggs and cream. Pour this egg mixture over the sausage mixture and stir well. this will be very soupy. add seasoning and stir. pour mixture in a very well greased 9 x 13 baking dish and cook at 350 for @ 1 hour. Some ovens use less time so start checking after about 35 minutes. the center will rise up and be firm to the touch.
