BREAKFAST BANANA BREAD PUDDING
Ingredients:
--In individual bowl combine—
1 egg 1 slice bread torn into pieces ½ to 1 whole ripe banana, diced ¾ cup milk 1 Tbsp. brown sugar ½ tsp. Vanilla 5 shakes cinnamonon
b>Optional: 1 Tbsp. raisins 1/4 C. granola (sprinkle on top last minute of cooking time)
Preparation: Combine all ingredients thoroughly. Microwave approx. 7 minutes or until set. Serves 1. Serve with warm cream or milk. Great if sprinkled with fresh berries.
Notation: I add approx. 2 Tbsp. of dehydrated fruit like blueberries or a fruit combo mix before I microwave when fresh fruit is not available. This recipe may also be doubled and microwave about 12 minutes or so.

I have a great recipe for sausage, egg, cheese casserole!
Ingredients:
6 eggs beaten 1 pint half and half 2 cups shredded sharp cheddar cheese 1 pound of ground sausage 6 slices white bread buttered with crusts cut off 13x9 " baking dish
Directions:
Brown and crumble sausage in a pan - drain off fat. Cut crusts off bread and lightly butter. Lay bread butter side up in baking dish so they cover bottom of dish. Sprinkle browned sausage over buttered bread then sprinkle on shredded cheddar cheese.
In a mixing bowl beat eggs, half and half and salt and pepper to taste. Pour mixture into baking dish. Cover and refridgerate overnight.
To cook: Preheat oven to 375 degrees. Remove casserole from fridge and let sit 15 minutes before placing in oven. Bake at 375 for about 45 minutes.
Its delish! I make this for Christmas breakfast and serve with warm biscuits and fresh fruit salad. Let me know if you make it!!!! :D
