Bushman - I tried your marinade listed here first on ckn tenders tonight and really enjoyed it! It was in the fridge overnight. On the side I did my version of fried rice and it was a hit. Thanks!

i like this version for bourbon chicken
Bourbon Chicken!
2 lbs boneless chicken thighs
1/4 cup soy sauce
2 tablespoons rice vinegar or red wine
1/4 cup bourbon
1/4 cup brown sugar
1 scallion
1 teaspoon powdered ginger
2 garlic cloves crushed
2 tablespoons peanut oil
Coarsely chop the scallion and mix all but the chicken (dice chicken thighs into bite sized pieces) and peanut oil together in a bowl. Whisk remaining ingredients until well blended, set aside.
Sauté chicken in very hot pan with the peanut oil until lightly browned on the outside.
Add liquid mixture to the chicken and reduce heat to medium.
Cook this UNCOVERED until liquid is reduced to a glaze on the chicken bites and chicken is fully cooked.
For a more intense flavor mix everything except the oil and store in the frig for a few hrs. or over night. Fry the chicken in the oil untill brown add the liquid and boil down.

Bourbon Chicken
1-1/2 lbs. chicken breast halves, boneless and skinless
2 T. olive oil
2 T. Dijon mustard
1/4 C. bourbon whiskey
2 T. red wine vinegar
2 T. Worcestershire sauce
2 T. soy sauce
1/4 C. brown sugar
2 garlic cloves, minced
Sea salt
Black pepper
Combine olive oil and next 8 ingredients.
Add chicken, cover and refrigerate for minimum
2 hours to over night.
Remove chicken from marinade.
Discard marinade.
Place chicken on grill over medium heat.
Grill uncovered for 15-20 minutes, turning once.

does anyone have a great recipe for bourbon street chicken, and possibly one with a substuite for the alcohol. I love the kind at golden corral, would love to make it at home. thanks
